Hazy is back with a mid week recipe that’s perfect for Hazyfogs pulled pork or any left over pulled pork. This recipe was made with this weekends pork butts and was quick and easy and tasted great. Follow .fog

Pulled pork Enchiladas
Ingredients:
2 cups pulled pork
8-10 corn tortillas
2 cups shredded cheese
2 cans enchilada sauce (can make your own or used store bought)
Optional: corn, beans, chiles

Instructions: preheat oven or smoker to 350 degrees. In a 13x9 greased pan pour 1/3 of the enchilada sauce to coat the bottom. Put shredded pork into each tortilla and roll them and place them in the pan. Pour remaining enchilada sauce over the top of the rolled pork enchiladas and place in the oven for 10 minutes. Remove from oven and cover with the cheese. Place back in the oven for an additional 15–20 minutes. Serve with cilantro, sour cream or your favorite toppings. This meal was served with Mexican rice and refried beans.

Hazy’s work Internet is down so he figured he shoot out a post since it’s been a little while and he knows IT GETS THE PEOPLE GOING

Brisket flat and boneless pulled pork went down on Saturday for the inaugural smoke on his new offset smoker.

He’ll let the pictures do the rest of the talking.

Smoked Chicken with golden Bbq sauce and red pickled onions

Work from home Wednesday was a big success. Hazy has decided to create a once a week recipe segment in which we shall share what we got cookin, and just how to make it. This week was Max tackled a smoked chicken on the Oklahoma Joe Highland series.

Smoked chicken:
1 full chicken (trim away giblets and any unwanted fat) This chicken was about 5 pounds and was spatchcocked as to better take the heat evenly.
Seasoned with Big C**k Ranch: Bad Ass S**t and Meat Church Gospel rub.
Cooked at 275 on the smoker for around an hour and 45 minutes. For those of you without a smoker a full chicken could also be roasted in the oven around the same temp and time.

Golden bbq sauce:
1 cup mustard
2tbs ketchup
2 tbs Worcestershire sauce
1tbs chipotle’s in adobo (minced)
1tbs salt
1tbs garlic powder
1tbs black pepper
1/4 cup apple cider vinegar
1/4 cup honey
1/4 cup brown sugar

Not much to it but to mix everything together. This sauce gets better with time so let sit in the fridge overnight for best use. can be used on all types of bbq including chicken and pork.

Pickled onions
1 red onion
1/4 cup water
1/2 cup distilled white vinegar
1/2 cup apple cider vinegar
1/2 tbs red pepper flakes
1/2 tbs black pepper
1/2 tbs salt
2 tbs white sugar.

Slice the onions into longer slices and place into a mason jar. Next mix the rest of the ingredients into a sauce pan and put on low to medium heat to bring the mixture to a simmer. Remember to stir as to help dissolve the sugar and spices. Let the mixture cool some and pour over the onions. Leave sit at room temp for around 30 minutes and then they can be refrigerated for up to two weeks. These onions are great on tacos, sandwich’s and so much more.

Part of Hazys strategic business plan to other-worldly success is to provide instructional content for beginners, experts, and everyone else in between.

Here we have a super simple recipe that I’ll do most weeks to meal prep my veggies

Roasted vegetables:

String beans; one bag trimmed
Red cabbage; one head, julienned
Broccoli florets
Seasoning of choice

1. Bring oven to 425F
2. Place cleaned and trimmed veggies in a bowl and mix with EVOO and seasoning of choice
3. Roast for 25 min
4. Broil on low for 5-8 minutes
5. Enjoy
