love this recipe from using our california blonde!✨ this dish brings together the nutrition of brown rice and the texture of white rice, making it the perfect base for a quick, easy and healthy weeknight dinner.🍽️

recipe👇
2 cups planet rice california blonde
3 cups water
1 bunch kale, roughly chopped and stems removed
1 avocado
1 yellow onion
2 cloves of garlic, crushed
1 can of cannellini beans
1 can of coconut milk
kimchi
salt & pepper
olive oil

make rice following package directions.
cut 1 onion into 1/2 inch wedges. in a separate pot, heat to medium and drizzle in some olive oil. add the onions and sautée for 5 minutes. add the two garlic cloves and cook for another 5 minutes, or until the onions are translucent. add in coconut milk and bring to a boil. add in the kale and cook for 5 minutes, or until kale has fully softened.

to serve, fluff the cooked rice with a fork and add a scoop of rice into a bowl. top with the stewed kale and garnish with beans, sliced avocado and a few pieces of kimchi.
