At first glance, it may look like crispy chicken and fried rice.

But to generations of Vietnamese families, it’s a taste of home.

Our version is inspired by the vibrant food culture of Saigon’s Chợ Lớn, where Vietnamese and Chinese culinary traditions have blended together for generations, creating some of the city’s most iconic dishes.

Gà: Chicken 🍗
Xối: To pour over
Mỡ: Rendered fat

Together, Cơm Gà Xối Mỡ refers to a traditional Vietnamese cooking technique in which hot rendered fat is poured over the chicken, creating its signature golden, crispy skin while keeping the meat tender and juicy. Today, many chefs achieve that same irresistible texture by frying the chicken until it’s perfectly crisp.
