Sampler: $20/person

Join us tonight for a taste of Txakoli, the bright, saline white wine of Spain’s Basque Country. Brisk, refreshing, and made for summer, Txakoli captures the spirit of the Atlantic coast. We’ll explore three expressions—one from Bizkaiko Txakolina and two from Getariako Txakolina—each showcasing a unique sense of place.

Raise a glass to one of summer’s most joyful pours with friends and sunshine!

Featured Wines
• 2024 Lasalde Elkartea Balea
Organic Hondarrabi Zuri with notes of lemon zest, green apple, white flowers, and a distinctly saline mineral finish. Light, racy, and naturally spritzy at just 11% ABV.

• 2025 Ameztoi Rubentis
The original pink Txakoli. This cult Basque rosé blends Hondarrabi Zuri and Hondarrabi Beltza, delivering bracing acidity, red-berry freshness, saline lift, and a delicate natural mousse.

• 2024 Ugabe Unfiltered Txakoli
A hazy, lightly skin-contact expression with tart green apple, nectarine, lemon zest, and sea-spray notes. Vibrant acidity and a savory, lees-driven texture make it especially delicious with shellfish and salty snacks.

Pardas speaks with conviction from the Alt Penedès: a family estate where farming begins with attention, restraint, and trust in the landscape. At Can Comas, vines are dry-farmed and organically grown, soils are left unplowed to guard against erosion, and biodiversity is welcomed rather than controlled. In the cellar, the same ethic holds: indigenous yeasts, minimal correction, patient élevage, and no shortcuts that could obscure a sense of place.

The 2018 Collita Roja offers finely etched red fruit, Mediterranean herbs, and earthy mineral tension, a graceful expression of Sumoll grown on the estate’s limestone-rich soils. The 2022 Xarel·lo is textured yet bright, layering citrus and orchard fruit with salt and a subtle savory depth. And the 2023 Sus Scrofa, named for the wild boar that serves as Pardas’s emblem, captures the estate’s untamed spirit: vibrant, honest, and full of local character.

Together, these bottles tell Pardas’s story: wines of land, integrity, and unmistakable Penedès identity. They invite us to taste patience, provenance, and a living Mediterranean landscape with real clarity.

Summer doesn't ask for much—just something cold, something honest, and someone to share it with. So we pulled together three bottles that get it.

We're kicking things off with the 2024 Luneau-Papin Le Verger Muscadet, a briny, mineral-driven white that tastes like the ocean took a vacation to the vineyard. Next, the 2025 Domaine Charvin Côtes-du-Rhône Rosé, proof that a region famous for bold reds can also pour something effortlessly refreshing. We'll finish with the 2024 Les Lunes Cosmic Blend, a chillable, low-intervention red that's simply here for a good time.

No pretension, no overthinking—just three highly drinkable wines made for warm nights and good company. Come thirsty. Leave with new favorites.

Island wines are made for summer. Shaped by sea breezes, volcanic soils, and generations of winemaking, they offer vibrant acidity, striking minerality, and a true sense of place. Many are crafted from rare indigenous grapes found nowhere else in the world.

Join us as we island-hop through the glass with three exceptional pours: a Vermentinu and Biancu Gentile blend from Corsica, a partially skin-contact Listán Blanco from Tenerife in the Canary Islands, and an old-vine Nerello Mascalese from the slopes of Sicily's Mount Etna. Each wine tells a unique story of its island home.
