After much reflection and with a heavy heart, I have made the difficult decision to permanently close Sage. This choice is driven by my ongoing health challenges, which I must prioritize at this time. As much as I have loved every moment of this journey, my health needs to take precedence.

Since we opened Sage in January of 2023, the restaurant has been a place where I could pour my heart and soul into every dish, sharing my passion for food with all of you. The past year and a half has been an incredible experience, and I am profoundly grateful for the support we've received.

To our loyal guests, thank you for welcoming us into your lives and allowing us to be part of your special moments. Your support has meant everything to me, and I am deeply honored to have had the opportunity to cook for you.

To the amazing staff who stood by me through it all, your dedication and hard work are what made Sage what it was. I am incredibly proud of what we achieved together, and I can't thank you enough for your commitment and passion.

Closing Sage is one of the hardest decisions I’ve ever had to make, but my health must come first. While the restaurant may no longer be open, the memories and connections we’ve created together will always be cherished.

Thank you for your understanding and support during this time. I will carry the love and community we built at Sage with me always.

"My husband and I had our rehearsal dinner here, and it was the most wonderful experience we could’ve asked for. Steven and the servers were friendly, professional, and accommodating. We were greeted with doors being opened for us and the dining room set up perfectly for our large group.

The food was absolutely immaculate. Each dish was served with precision and cooked to perfection. The flavor within each dish was mouth watering. I have visited a number of fine dining restaurants on my travels to western NC. Far too often I am left a bit disappointed the meals I have had. Sage, however, exceeded all expectations. First, the restaurant itself is lovely and inviting. The service was timely and attentive without being overbearing.

Our meal was the star. I had the roasted pork tenderloin. From the description I expected the pork to be a bit sweet, easy to do, but a cover for lesser pork. That was not the case. Pan seared and savory. I would eat it again for sure. My wife had scallops with pappardelle, green tomato and pickled blackberries. I expected, as is often the case, beautiful scallops smothered in a cream sauce. Nope, not here. It was divine. The green tomato complemented the pasta and scallops. No pile of parm cheese killing the scallops. The pickled blackberries combined two things my wife loves, blackberries and vinegar.

A unique "a Sage original" and, again, unexpected. I was suspect of the muscles as everyone says it is a chef's specialty. I have never had muscles cooked as well, even when I do them. Each and everyone was plump, the flavors were subtle, and they didn't over power the muscles. No giant pile of garlic or shallots. No half a cup of lemon juice drowning out the flavor.

I wish chef Lash and his crew good health, I know he is dealing with some issues. If they are there when I get back I will be sure to be back. If you are within an hour of this place there is no excuse to miss it." ~

The meal also included an Amuse Bouche, a Mignardise, a palate cleanser (not pictured) for 11 dishes in all!

We sincerely hope that our guests enjoyed the experience as much as we did! We are already thinking about the next one!

Team outing to Asheville! We ate, we explored, we collaborated, and we bonded.

In all my years of restaurant work, I never once went on a company field trip. Then again, I've never worked with a team that felt so much like family.

Yesterday we took they day and explored Asheville a bit. We ate, we brainstormed, and we bonded. Most of all we relaxed and had a great time!

Between the farmers market, restaurants, and shops, there is so much opportunity to try new flavors and get inspired. And that is exactly what we did!

Obe of the highlights for me personally was sitting back and listening as my team - front and back of the house - brainstormed and collaborated to come up with a new dessert dish. Everyone had input and everyone's input was welcomed. I actually had the least input and I was enjoying witnessing the process. When teams truly collaborate and have an outlet for creativity, magic happens and soon you'll see it on a plate.

Thank you Team Sage for a wonderful day and being such an awesome crew!!
