There’s been a lot of talk in the news this week about beef imports and ground beef. We’re not going to get into the politics of it, but it does give us a good opportunity to answer a question about what we serve at Corks & Hops.

**We do not buy ground beef. At all.**

Not from a wholesaler.
Not from a butcher.
Not frozen.
Not pre ground.

Every burger we serve is ground **in house** from Certified Angus Beef tenderloin and ribeye. We know exactly what goes into it because we’re the ones trimming it, grinding it and serving it.

There are plenty of things in the restaurant business we can’t control. Where the beef in our burgers comes from isn’t one of them. If you order a burger at Corks & Hops, we guarantee you’re getting real Certified Angus Beef, ground right here in our kitchen. Peace of mind is priceless.

Pour Decisions is back with a BANG!

We just received our small allocation from Rochioli, one of the most respected wineries in the Russian River Valley, and the subject of Wine Spectator’s upcoming September cover story. These wines are difficult to get, and we’re opening both the 2023 Estate Chardonnay and 2024 Estate Pinot Noir for tonight’s tasting.

Then we’re putting you to work.

The final two wines are Bonanza The Vinekeeper Napa Valley Cabernet Sauvignon and Silk & Spice Portuguese Red Blend and are competing for a spot on our wine list. You’ll taste them side by side, vote for your favorite, and help decide which one stays.

Happy Trivia Tuesday!

First, we’re proud to announce that Ashlyn has earned a HUGE promotion at her day job. We’re excited for her and fully expect her to continue killing it.

BUT, because she apparently loves all of you enough to spend Tuesday nights picking on you for missing questions (we mean hosting trivia), she has decided to stick around as our Trivia Host.

So come see Eagle River’s most vastly overqualified trivia host tonight at 7:30, order a hand ground Certified Angus Beef Tenderloin Burger, and confidently pretend you know the answers.

We opened up 4 more seats!

Our upcoming Wine Spectator Award Celebration Wine Dinner sold out, but we’ve continued to get requests from people hoping to attend.

So, we did a little rearranging and have officially opened up 4 additional spots for the dinner.

This is going to be one of the most ambitious wine dinners we’ve done at Corks & Hops. We’re pulling out some seriously special wines for this one including 100-point wines and bottles that retail for $300+ and building a multi-course dinner around them.

These are the final 4 seats we can add.

It’s Friday, and the halibut is back.

We finally have fresh Alaskan halibut again this weekend, and if you’ve been waiting for it, tonight’s the night. Fresh, beautifully prepared, and back on the menu while it lasts.

We’re also running the Champion’s Cut tonight, our 48-hour marinated Certified Angus Beef bavette. Big beef flavor, incredibly tender, and one of our favorite cuts.

Fresh Alaskan halibut. Champion’s Cut. Plenty of wine. And don't forget the return of the Dubai Cheesecake!

Apparently our phone has decided it also wants the weekend off.

Just a heads up, Corks & Hops is OPEN and operating normally today. Our landline is currently down, and GCI is on the struggle bus with no clue why.

So if you've tried calling and you hear that the number doesn't exist anymore, we promise we didn't suddenly close, disappear, or flee the state.

We're here. The kitchen is open. The wine is pouring. The phone is just broken.

Our September 16th Wine Dinner is almost sold out, and this is going to be a special one.

We're celebrating our 2026 Wine Spectator Award of Excellence with an evening built around some truly exceptional wines, paired with a multi-course dinner from the Corks & Hops kitchen.

We're pulling bottles for this dinner that we simply don't normally pour by the glass, including some highly rated and hard-to-find wines. This is exactly the kind of dinner we had in mind when we started building our wine program years ago.

JASON, why are so many wines on your list out?

The answer is a little long, so bear with me.

Restaurants and retailers don’t buy wine directly from most wineries. We buy through distributors. In Alaska, there are two large distributors that supply the vast majority of the wines we carry.

Right now, one of those distributors is going through a bankruptcy, which has severely limited what they can purchase and bring into the market. The other has essentially doubled in size, so they’re working through the growing pains of transporting, warehousing, and delivering a much larger portfolio.

What does that mean for us?

At the moment, I’m probably receiving about 1 out of every 3 cases I order.

So yes, our wine menu currently looks a little like my handwriting tests from fourth grade... lots of cross outs, substitutions, and red ink.

For now, we’re going to play it out and see if things settle down. In the meantime, you may see quite a few new wines on the list over the next couple of months as I hunt down strong alternatives to the bottles we can’t reliably get.

We’ve spent nearly six years building what we believe is the largest wine by the glass list in Alaska, and this year that program earned us a 2026 Wine Spectator Award of Excellence.

This is a speed bump, not a change in direction.

We’ll keep tasting, adjusting, and finding great wines to pour while the distribution side works itself out.
