As a busboy, if there were any moments of idleness, Frank would always ask you to “police your area.” Which meant look around and check the floor for minute specks of lint, or adjust the cookies, fruit, sugar, and nuts. You where always active.

Does anyone remember working with a guy named Jerry Schwartz? He was before my time.
He would periodically stop in and say hi to the waiters that had been there for some time. I would ask “Who was that guy”? And Joe Ambrosio would say “That was Jerry Schwartz,” as if he was speaking of a legend.

Mr Amato was a very complex man. One day, I was walking past Frank Amato, who was humming at his note filled maitre d’ stand. As I passed heading towards the kitchen double doors he said to me “son, son. Get me a cup of espresso.”
I walked through the kitchen and headed to the coffee room. When I got there, Mr Amato was already there. He apologized to me, and then asked if he could get me an espresso. When he was a young waiter, his old bosses treated the staff like second citizens. At that moment he caught himself. A great man.
