I have a couple servings of black garlic tare left, so that's on till I run out.

Ramen special this week is a wontonmen; a japanified hong kong wonton soup. Clear chicken and fish double soup, shoyu tare, and chiyu with bok choi, handmade shrimp and pork wonton, marinated egg, menma, and scallion.

In the donburi section is a chicken stir fry that utilizes some of my favorite ingredients: tobanjian (a fermented chili paste that has a super distinct spicy/tangy flavor) and douchi (fermented black soybeans: imagine slightly dehydrated cooked black beans that taste like soy sauce). The chicken is wok'd hard for a little char and then stir fried with the veggies and some extra sauce to get a tangy,smoky,rich, and savory mix atop rice. Served with a tangy, refreshing side of fermented daikon radish.
