So I've been going over ideas in my head, and quite honestly not having much luck.

I epically failed! Plain and simple. Trying to do the bbq we had won so many awards for in the past, in a beautiful setting, with tons of things for families to do, couldn't come close to covering it's costs of operations. And I even figured on less than 50% of our previous sales, sadly we barely did 30%. The cost of the build out, all the unexpected hurdles and redoing of poorly done work, added to a few management mistakes like way too much weekly payroll and having our prep done in our catering kitchen not onsite, gave us huge expenses that our sales just couldn't cover. With bbq places popping up all over the place, and quite honestly a race to the bottom by people not having a clue how to figure their food cost, I'm not sure attempting to continue even with a much smaller staff is even a feasible idea.

So now I'm trying to figure out things to do with the location, and want to run some ideas past all of you that supported us!

Convenience Store..
By changing the grounds a little we could add fuel pumps, and inside everything you could need for a weekend river trip, deli style sandwiches and some of our bbq maybe just on weekends.

Bed and Breakfast..
The property, and our epically ginormous septic system, could easily support a small hotel, 14 or so rooms. Keep the original church building for a small store and serve breakfast and possibly weekend dinners.

Speakeasy/Social Club..
Bring back our steaks, keep the ribs, chicken halves, and brisket. Serve just dinner, have servers, and build a kitchen onto the backside of the building. With a slight change of the interior decor, installing comfortable booths and give it an old school steak house vibe.

Of course, all of these require more money than we currently have. So it will take some time to save the funds. Sadly, the bids on my body parts wouldn't cover a tank of fuel much less a remodel. So we will continue with our catering! Speaking of which, in a day or two I should have a post about our catering so watch for it!

This Saturday from 10:30 to 1:30 we will be at the West Plains Zizzer Softball Fields serving up lunch for a very special softball tournament!

Many of you already know about young Ava and her battle with ANCA-associated vasculitis, but for those that don't I will post the West Plains Daily Quill story on her in the comments. Please take a minute to read about this strong little girl!

***Mystery solved!***
I meant to do this last night, but we have been extremely busy with caterings! We were contacted by those involved, a child got sick on that awesome hilly curvy drive down 19 from Eminence! The soda cans, wipes and stuff left scattered all around was from them being cleaned up! They simply forgot to clean up when they left. I sincerely appreciate them reaching out to us.

So here I planned on making a post about catering and possible future operations.. but instead I'm cleaning the sh*t show up..

Apparently we had visitors yesterday just before 11am.. I'm just guessing, butt.. an educated guess says they were experiencing a slight urgency to use the facilities. After discovering the doors locked, they proceeded to blast their bowels out in front of our old dodge.. which by the way, the old dude dodge says that's not what he likes to wake up to on Sunday mornings! As one with ibs and having lived through that puckered race to the toilet many times in my life, I understand when it hits it hits.. but never in my life have I left a puddle of mud, half a roll of tp and a dozen wipes as a doormat to anyone else's property! What on earth were you thinking?!

Soooo.. anyways.. it's cleaned up, and after I bathe in disinfectant for at least an hour or so I'll come back to make my intended post!

And to think, you were pulling an rv.. you could have used the bathroom in that and not been posted up on the internet today!

Bootleggers has been catering for over the past 10 years. Taking care of parties of all sizes, including our largest of over 1500 people. We travel as far as needed, we've catered just outside of Kansas City, Branson, Springfield, near Jonesboro and as far away as Panama City Beach, Florida and Orange Beach, Alabama! So matter what the number of guests you are needing to feed, we can take the pressure of cooking off your shoulders! And don't worry, we do so much more than just our bbq! Want an Italian feast? Or maybe a nacho or taco bar? Prime rib to pork steaks, whatever you are dreaming up, we've probably served it before!

Well folks, sure wasn't what we had planned, but apparently we still have more to lessons to learn..

The Bootleggers Mercantile & Bbq restaurant is closed. Unfortunately, our best laid plans and efforts simply did not work at this time. That is the hardest lesson to swallow!

On the plus side Bootleggers will still be catering! We have reached out to everyone that has caterings booked and have assured them we will be taking care of their events with our top notch service and food. We will continue to offer the best catering services, just like we have over the past 10 years!

We will take a step back, and try to figure out what the future holds for the restaurant.

If you are in need of great hard working employees, please reach out to us! We have a staff that needs new options. All of our crew have been incredible, fast learners, hard working and very reliable! So please reach out if you are in need of a new star employee and we will gladly pass on information.

Thank you to all of our customers, we will see what the future holds.

We keep learning new tricks! Our new deck oven has given us a better way to make some of your favorite items. We are truly proud of how our quesadillas finish out now! That fancy new oven also helps us bring back another favorite, our BBQ Naan Pizzas!

That's right, these beautiful personal sized pizzas are a delicious meal on tasty naan bread! We are offering three different pizzas to start.

Our Pulled Pork Pizza starts with a light layer of our house bbq sauce. Then plenty of mozzarella and cheddar cheese and our tender tasty pulled pork. After a quick two minute bake we drizzle a touch more bbq sauce and add a few green onions to finish it off!

The Chicken Bacon Ranch Pizza is just as it sounds! Our house made creamy ranch dressing as a base, then a healing handful of mozzarella cheese, followed by our juicy pulled chicken and bacon bits! After a quick bake another drizzle of our ranch dressing over the top gets your taste buds going!

And finally the Sweet Onion Brisket Pizza. Has our sweet onion bbq sauce, topped with mozzarella cheese, our famous bark-a-licious tender brisket and sautéed onions. Then another drizzle of our sweet onion bbq sauce over the top!

These pizzas are quick, absolutely delicious and so satisfying! And now on our daily menu!

There are many questions regarding the Cyclospora outbreak. So here is what we know, and how we will handle it.

We take our food safety very seriously, we even covered the topic in our staff meeting today. I'm a person that reads a lot, I'd rather read news stories than scroll Facebook. So that means since the outbreak first started 3 weeks ago in northern states I started researching. That continues multiple times a day quite honestly. We know our producers and suppliers. We stay in contact with them, and know they have immediate reactions and systems that are in place if anything gets confirmed.

As of right now, health officials have not confirmed a single source or supplier. Despite rumors or speculation, nothing has been confirmed. That’s why we rely on official guidance rather than social media speculation.

Our commitment to food safety hasn’t changed, we still take all necessary steps to provide proper safe food handling whether there is an outbreak like this or not.

Our salad bar is prepared using strict food safety procedures. All produce is inspected, washed, and handled according to food safety guidelines. We monitor and refill the salad bar throughout the day to maintain freshness. Our producers and distributors are in communication with us. Any food safety advisories come through quickly by text and email.

Once a product is confirmed to be the cause by health officials, we will immediately remove that item, if it has a possibility of being from the affected producers batch. Otherwise, we will continue to maintain our strict standards of food safety.
