So I've been going over ideas in my head, and quite honestly not having much luck.
I epically failed! Plain and simple. Trying to do the bbq we had won so many awards for in the past, in a beautiful setting, with tons of things for families to do, couldn't come close to covering it's costs of operations. And I even figured on less than 50% of our previous sales, sadly we barely did 30%. The cost of the build out, all the unexpected hurdles and redoing of poorly done work, added to a few management mistakes like way too much weekly payroll and having our prep done in our catering kitchen not onsite, gave us huge expenses that our sales just couldn't cover. With bbq places popping up all over the place, and quite honestly a race to the bottom by people not having a clue how to figure their food cost, I'm not sure attempting to continue even with a much smaller staff is even a feasible idea.
So now I'm trying to figure out things to do with the location, and want to run some ideas past all of you that supported us!
Convenience Store..
By changing the grounds a little we could add fuel pumps, and inside everything you could need for a weekend river trip, deli style sandwiches and some of our bbq maybe just on weekends.
Bed and Breakfast..
The property, and our epically ginormous septic system, could easily support a small hotel, 14 or so rooms. Keep the original church building for a small store and serve breakfast and possibly weekend dinners.
Speakeasy/Social Club..
Bring back our steaks, keep the ribs, chicken halves, and brisket. Serve just dinner, have servers, and build a kitchen onto the backside of the building. With a slight change of the interior decor, installing comfortable booths and give it an old school steak house vibe.
Of course, all of these require more money than we currently have. So it will take some time to save the funds. Sadly, the bids on my body parts wouldn't cover a tank of fuel much less a remodel. So we will continue with our catering! Speaking of which, in a day or two I should have a post about our catering so watch for it!
