Our Cheese of the Week is coming out swinging! 🥊🧀

Meet Knock Out!, a Swiss alpine-style cheese with a pretty incredible origin story.

Made by family-owned Güntensperger Käse in Switzerland, this cheese was born from a happy accident. During a thunderstorm, a power outage led to too much cream being added to the cheesemaking process. Rather than toss the batch, the cheesemakers decided to age it, and a knockout was born!

Aged for at least 7 months, Knock Out! is rich and velvety, with delicate crunchy crystals, savory umami, and hints of fruit and pepper.

One happy accident, one seriously good cheese. ⚡ We’ll be sampling Knock Out! all week at Cheesetique, so swing by the shop and give it a try!

We raided the w**e wall and paired five bottles with some of our favorite Maeve chocolate bars. From salty and sweet to rich, fruity, and a little spicy, there’s a pairing for every kind of chocolate craving.

Graham Beck Brut Rosé + Funnel Cake

Bright, fruity Brut Rosé meets creamy milk chocolate, cinnamon, and crunchy demerara sugar. Fresh acidity and bubbles balance all that sweet, funnel cake goodness.

Les Brebis Willamette Valley Pinot Noir + Hungry Blackberry

Juicy Pinot Noir and blackberry were practically asking to be paired. Bright red fruit plays off the blackberry, while dark and white chocolate bring a little extra richness.

The monthly Cheese & W**e Club is three cheeses, accompaniments, and w**e, packed as a kit you pick up and take home. The online classes change every month: a kit of cheeses and accompaniments, w**e if you want it, and Jill teaching live on Zoom while you taste along at home.
