🥔🔥 We weren’t planning on saying anything yet… but we think our Smoked Loaded Brisket Potato deserves more than just a Friday & Saturday appearance.

A smoked baked potato loaded with butter, cheese, bacon bits, slow-smoked brisket, and finished with both of our homemade BBQ sauces—sweet and spicy. 🤤

We’re seriously thinking about making loaded potatoes available all week, and that means introducing a Pulled Pork Loaded Potato too.

Because honestly… some cravings shouldn’t have to wait until the weekend. 😉🐷🔥

Today, we’re choosing to take a step back.

Unfortunately, we won’t be opening today. These last few weeks have been a lot, and today we need a little time to regroup and recharge. Running a small family business is one of the greatest blessings, but it also comes with days that are harder than others.

One minute she’s giving us her best Fergalicious concert… the next she’s giving a smoked mac & cheese update like it’s the evening news. 🤣

THANK YOU!! ❤️🔥

To everyone who came out today and everyone supporting us online… thank you! We were literally left with just ONE rack of ribs and some smoked beans before the rain sent us home. 😂🌧️

The work doesn’t stop though! Tonight we’ve got a pork butt hitting the smoker, and tomorrow at 5 AM it’s ribs, turkey, sausages, and all our homemade sides for another day at Lowe’s!

We also got to chat with Lowe’s upper management today, and they’re just as excited about this partnership as we are. They even asked about our friends at Sourpuss Lemonade! 🍋 It’s only been 4 days and we already miss them. 😭

Word is getting out, and we can’t wait to see Lowe’s on Northern become THE spot for great local food. See y’all tomorrow! 🔥🐷

We’ve been working behind the scenes, and we’ve got a TON of new things coming! 🔥

First things first—we fell a little behind on our schedule, so we’ll be taking tomorrow off and using Thursday (our usual prep day) to get everything ready for an exciting week ahead.

🐷 Our New Home Base Hours

We’re officially adding LUNCH HOURS at our Lowe’s home base! 🙌

If you’ve been waiting for a midday BBQ fix… this one’s for you.

And yes… our Lowe’s location is the real deal! We have permission and a contract to be there. Come support us at our new home base, so Lowe’s can continue to support food trucks with their food truck program, that we’re so lucky to partake in. We’d love to see that location become a regular lunch stop for Rio Rancho! ❤️

🍖 About This Week’s Meat

We’re making one small change based on recent sales.

We’ll be smoking slightly less meat for Friday to help reduce waste and keep everything as fresh as possible.

Don’t panic… brisket isn’t going anywhere! 🤠

We’ll still have it—just in more limited quantities, so it’ll be first come, first served until sold out.

We’ve also completely redesigned our menus.

As much as we loved all the truck-driver-themed names, we realized they were causing a little confusion for some customers. So we’ve made everything much more straightforward and easier to read while still keeping the Pig & Rig personality you all know and love.

We’ll now have printed menus available so everyone can easily see every item, every price, and all of our options without the guesswork.

This honestly feels like the beginning of a new chapter for us, and we’re incredibly excited.

Here’s to our very first full week at Lowe’s 🎉 and another awesome Food Truck Friday at Los Montoyas Park! We can’t wait to see all of our regulars and hopefully meet a whole bunch of new faces too.
