Did you know at Kaufmans coffee and bagels, we only use King Arthur Brand flour.
The reasons being:
1)  Their flour never bromated
2)  Their flour is never reached
3)  It is an employee owned company
4) The sir Lance, a lot flour is high in protein to give our Bagels a great chew
