Quick update from the bistro. We have electricity and we shall be open for business at 12:00 today instead of our regular weekend opening hour.

Also, remember that we now stay open for evening service till 10:00 pm on Friday and Saturday and until 9:00 on other days.

We are closed until 4:00 pm Saturday. The thunder storm destroyed our electrical power.
So thankful for all the other small businesses that offered to keep our food in their fridges.

Nobody tells you this about owning a restaurant.

They tell you about the long hours, the dishes, the deliveries, the early mornings, and the late nights.

What they don't tell you is that one day, someone you've never met walks through your door.

They come back the next week.

Then the week after that.

You learn how they take their coffee. They ask how your garden is doing. You remember what they ordered last time. They stop by just to say hello, even if they aren't staying for lunch.

Somewhere along the way, a customer quietly becomes a regular.

A regular becomes someone you know.

And before you realize it... they've become a friend.

No one told me that this would be one of the greatest gifts of owning a restaurant.

To everyone who has walked through our doors—whether it was once or every week—thank you for making The Independent feel less like a business and more like the kind of place we hoped it could become.

Here's to slowing down, lingering a little longer, and finding community in the most unexpected ways.
