Hattie Moseley Austin Gray, who built Hattie’s Chicken Shack in Saratoga Springs with just thirty-three dollars and a dream, our restaurant carries forward her spirit of hospitality, community, and unforgettable food. Operated by the SEAT Center, this restaurant is more than a place to dine: it’s a living classroom where aspiring chefs and hospitality professionals train, grow, and prepare for successful careers in the culinary industry. Known for our signature fried chicken and a menu that celebrates both comfort and creativity, each meal here directly supports the education and career development of young talent. Please note we are a cashless restaurant and a learning environment so we kindly ask for your patience and warmth toward our student servers as they hone their skills. If you haven’t seen our website or Instagram just yet, we are taking a culinary training pause and will resume regular dining hours in November.

In fact we had so many culinary students graduate and get hired, this is what we like to call a good problem to have. We understand this pause may come as a surprise, but in our program model we have built in time to focus on culinary training and support and this is one of those times!

We remain open for private parties and catering subject to availability. We are happy to answer questions. To remain updated continue to follow along our pages and check our website.
