We’re excited to share that The Skinny Pancake has officially opened its second Capital Region location in Latham, bringing even more of your favorite sweet & savory crepes, coffee, and all-day eats to the Albany area!

From breakfast to dinner, to any time in-between, you can now get your Skinny fix in both Albany AND Latham, New York. How sweet is that?!

And just like that, we are nearing the end of 2025. We’re closing out the year the best way we know how: with a lineup of cozy, crave-worthy specials to keep you warm all December long.

🍫 Chocolate Peppermint Blizzard Crepe // A December tradition! A sweet chocolate crepe wrapped around Marshmallow Fluff, chocolate hazelnut spread, and crushed peppermint candy canes. The people of Pancakia have asked for this crepe's return year after year, so naturally... we listened.

💥 K-Pop Crepe // A savory scallion crepe featuring Vermont braised beef, local kimchi with a creamy Korean style BBQ sauce, served with a side of cilantro chili dipping sauce. We love this one too much to not keep around till the end of the year!

☕️ Mint Hot Chocolate // Housemade hot chocolate infused with mint. It's simple. It's cozy. It's perfect.
