Happy Monday everyone!

Heres an update on whats been going on in our lives since we had to park the food trailer.
I finally had my injections in my lower back on the 12th. Unfortunately, I have had no relief.
I have an appointment with pain management to see what the next step is.
So....Backlash Grill Food Trailer sits.
I think we will have to sell it. I hate to do that, but I do believe my cooking for y'all as come to an end.
On the other hand, we will be concentrating on breeding our Frenchies.
We have 2 girls that we bred and they both go in on July 7th for a puppy confirmation.
This little Lilac Brindle beauty, Miracle, is saving her energy in case we find out that she is pregnant.
If she is, she will be having puppies around July 31st!
Sleep as much as you need to sweetheart. Mommy loves you! 🩷

Thank you to all of the wonderful people we have met along the way. I love cooking and this is definitely a life change I did not plan for, but God is at the wheel and he knows what is best for me.

Happy Monday, May11th!

As y'all know, my health issues have taken their toll on me lately, and I wanted to give everyone a little health update.

At this time, I’m still unable to work, but after a long wait, I was FINALLY cleared to begin injections in my lower back. I’m hopeful this will be one more step in the right direction toward healing and getting back on my feet.

I truly cannot thank everyone enough for the prayers, messages, calls, and kind words. During some very hard days, your support has helped lift my spirits more than you know. It means the world to me.

For now, The Backlash Grill is still sitting quiet and waiting patiently for the right time to return to Lake Fork Tackleshack.

Please continue to keep me in your prayers as I continue this journey toward recovery.

Happy Monday, April 27!

Today I want to share a personal update from my heart… ❤️

After a long wait, my insurance finally approved an MRI for my lower back. The results, unfortunately, were not a surprise. I have multiple herniated and bulging discs. One is very close to pinching my spinal cord, and another is pressing on my sciatic nerve, which explains the constant pain running down my right leg. 🩺
On top of that, the discs in my neck have worsened, now pinching nerves that are causing tingling and numbness in my left arm. This is the progression of Degenerative Disc Disease that I was diagnosed with about 4 years ago. I knew about the issues in my neck, but the lower back injury is something new I’m now facing.

With all of this, and with my husband battling Stage 3 COPD—where even the smoke from the grill triggers flare-ups, we’ve had to make an incredibly difficult decision.

It’s time for us to step away from the food business. 🙏
This has not been easy to accept. Saying I’m heartbroken doesn’t even begin to cover it. Y’all know how much I love my food trailer and how much each and every one of you has meant to me. You weren’t just customers… you became friends, family, and a huge part of my life. 🤍

I’ve reached out and let Theresa Zierlein Hairston know we won’t be returning, and we are currently in talks with Mike, the new co owner of Lake Fork Tackleshack about the future of the trailer. My hope is that he will purchase the trailer and it will continue serving the community we love so much.

Sometimes life gently nudges you… and sometimes it firmly decides for you. Right now, I have to listen to my body and focus on my health.

For this next chapter, I’ll be pouring my heart into my French Bulldog breeding business, and for now, that is exactly where I need to be. 🐾

From the bottom of my heart, thank you. Thank you for all the prayers, the messages, the love, and the unwavering support over these past 3 years. It has meant more to me than words can ever express. 🙏❤️

The Backlash Grill may be closing this chapter, but the memories, friendships, and love we’ve shared will always stay with me.

I couldn't of said it any better. I will always have a dog, or 8 😊, in my house as long as I can take care of them. I am sidelined from working my beloved Backlash Grill Food Trailer but I have my babies keeping me company until I can get back to work. I don't think they mind me staying home.

Hello and happy Monday, March 30th!

I wanted to take a moment to share what’s been going on with me personally after this past weekend at Crappiefest.
While working, I experienced some medical complications related to my ongoing health issues. I’ve been pushing through for a while now, even after being warned about the limits of what my body can handle… and it’s clear now I’ve got to start listening.
I have upcoming appointments with my orthopedic surgeon and pain management team to try and get some answers and figure out the next steps.
For now, Backlash Grill will be sidelined until my doctors can get a better understanding of what’s going on. This isn’t easy to say, because y’all know how much I love what I do. Feeding people, seeing your smiles, being part of these events—it means everything to me.
I truly hope to get back to it soon, even if it means slowing things down a bit and focusing on special events moving forward. I’ll keep y’all updated as I learn more.
Right now, I need to focus on healing. I can’t even hold onto a spatula to cook, and that alone tells me it’s time to pause.
Backlash Grill will be waiting patiently… and so will I.
I would like to especially thank Theresa Zierlein Hairston and Lloyd Hairston for allowing us to set up in their parking lot at Lake Fork Tackleshack.
If anyone is looking for a place to set up, y'all need to get ahold of them. They are the sweetest people and there's wonderful people waiting for something delicious to eat!
Thank you all for your love, support, and understanding—it means more than you know. I will miss each and everyone one of you. 🩷

Mark your calendars for Crappiefest, taking place this Friday, Saturday, and Sunday, March 27th-29th at Caney Point Recreational Area located at
3875 W State Hwy 154 in Yantis.
We're excited to announce that our team here at The Backlash Grill Food Trailer will be ready to serve breakfast at 8 am on Friday, followed by registration and a free fish fry with live music.
Saturday and Sunday, attendees can look forward to over 150 vendors, pony rides, live concerts, delicious eats and treats from 20 food trucks and let's not forget...2 Crappie Tournaments!
The festival will start at 11 am Saturday and Sunday and with its wide range of activities and entertainment options, Crappiefest promises to be an enjoyable experience for everyone involved.
This Festival has something for all ages, so bring the kids and have a great time!
‼️For all my customers who were wanting breakfast, you can still come between 8-11 all 3 days. You'll have to park in the parking lot and walk over to us.
