Pancake Pandemonium Pancake Pandemonium will be a one of a kind food trailer specializing in pancakes

My idea is to combine my love of breakfast foods and serving others in a new kind of mobile food service. The idea is to have it built into a one of a kind food truck out of a double decker bus. I have already found a bus to use as well as a top notch company to do the build using the best equipment. The bottom section of the bus would be the kitchen and the top would be converted into a dining area , this way you have a place to have your cakes and eat them too!

Made several modifications along the way as I work on the food trailer. Almost ready to reassemble it for the final time to be ready for inspection. There is still a lot to do. Even a simple trailer like this takes a lot. In fact probably more work because of the compact size.
No word yet when it will be operational so check back periodically for updates.
I look forward to seeing you all someday while I’m out and about cooking great food.

Making Mountain Dew Waffles Today
1 1/2 cups all-purpose flour
3 1/2 teaspoons baking powder
1 teaspoon salt
1 tablespoon white sugar
1 1/4 cups Mountain Dew
1 egg
3 tablespoons butter, melted

1. In a large bowl, sift together the flour, baking powder, salt and sugar. Make a well in the center and pour in the milk, egg and melted butter; mix until smooth.
2. Heat waffle maker and lightly coat with no stick spray. Pour or scoop the batter into the waffle maker using approximately 1/3 cup for each waffle. Brown on both sides and serve hot.

Who Cakes
This is a combination of two different recipes. I took some ingredients from a "flapjack" recipe and combined it with my traditional pancake recipe.
------
1.5 cups all purpose flour
1.5 cups graham cracker crumbs
3 TBS sugar
6 TSP baking powder
1 TSP salt
1/2 cup almond finely chopped
3 eggs beaten well
3 cups milk
------
1/2 cups dried apricots finely chopped
Using 2 oz ladle, pour onto heated 375° skillet. Cook until bubbles form on the surface. Flip over to finish cooking. Serve warm.

I'm looking at starting with a much cheaper trailer and build my way up from there. I'm also looking at building up my own trailer and I'm interested in going with a southwest theme. I'm thinking adobe look on the outside but not sure what kind of material to use to achieve that without using adobe which could crack and fall apart while going down the road. Any advice is welcome. Here's an update on the bus. Long story short, I walked away from it because it needs too much work for my taste. Basically I would be getting a shell that needs a lot of work. The short list without too much investigation: replace all 6 tires, replace all the windows and lights, replace the wiring throughout, replace the engine which is currently a 1959 Packard engine, completely gut the inside, replace the "water tank" and propane tank, lots of body work all around, and that's just scratching the surface. All in all, I'm happy with my decision.

I'm very excited about this one. The biggest hurdle with other buses is that I would have to pay for the conversion on top of the cost of the bus. This one not only is already converted but is also a licensed food truck as well. Of course I wouyld have to license in my own name. But, the kitchen conversion, the hard part, is already done here.

Today's pancakes as mentioned were beer batter with Hatch green chili added.
2 cup sifted all-purpose flour
1/2 cup white sugar
1 1/2 teaspoon baking powder
1 teaspoon salt
2 eggs, beaten
12 ounces of beer (I used Corona to go with the chili)
1 Hatch green chili
2 tablespoons butter, melted
Mix all ingrediants and cook on lightly greased griddle approx 375 degrees. Enjoy!
