We hope you all had a Happy New Year and continue to have the best year possible!

We have some good news for all of you Red Apple Balsamic Vinegar lovers out there.... It's no longer a seasonal flavor, it is with us for good!!

Unfortunately as new flavors come in some of our old flavors have to go out. Our Espresso Balsamic Vinegar is now going to be a seasonal flavor, we expect to have it back in during the summer months since it's one of the best grilling Vinegars we have.

Are we all ready for Thanksgiving??? Stop by today to pick up that Extra Virgin Olive Oil or Balsamic Vinegar you need for that special dish.

The sides were having at our house this year are Garlic Mashed Potatoes using our Garlic Olive Oil, Brussels Sprouts using the Persian Lime Olive Oil, and for dessert we're making Chocolate Soufflé using our Espresso Balsamic Vinegar. See below for all the recipes we will be using this Thanksgiving, including a bonus recipe.

Garlic Mashed Potatoes

1½-pounds Yukon gold potatoes, peeled and quartered
TT Salt (substitute truffle salt if desired)
¼ cup The Olive Vineyard’s Garlic EVOO
TT Fresh ground black pepper
½-1 cup milk (optional)
1 Tbsp. Salt (for boiling water)

Add the peeled and quartered potatoes to a medium pot of water with salt and bring to boil over medium-high heat. Potatoes should only take 15-18 minutes after the water has started boiling to become tender, once potatoes are cooked though add them to a blender with the truffle or regular salt, Garlic EVOO, fresh ground black pepper and ½ cup of milk, pulse the blender until it reaches the desired consistency. If you like your mashed potatoes a little creamier you can add the remaining milk and pulse again.

Chocolate Soufflé

3-4 Tbsp. Butter to coat baking dish
1/2 cup sugar, divided
3 Tbsp. The Olive Vineyard’s Espresso Balsamic
5 ounces bittersweet chocolate, chopped
6 egg whites
4 egg yolks

1. Preheat oven to 400F. 6 (8-ounce) ramekins and sprinkle with 1/4 cup sugar.
2. Combine espresso balsamic and chocolate in a glass bowl. Microwave about 30 seconds; stir and microwave again for 15 seconds, continue this until chocolate is melted. (shouldn’t take more than 45sec)
3. Whisk egg yolks into chocolate mixture.
4. Beat egg whites in a clean, dry bowl with a mixer until frothy. Gradually add remaining 1/4 cup sugar, beating until soft peaks form.
5. Stir about 1 cup egg white mixture into chocolate mixture. Fold remaining egg white mixture into chocolate mixture.
6. Spoon into the prepared dish. Place on a baking sheet and bake 20 to 25 minutes, soufflé will rises. Serve immediately.

Brussels Sprouts

½ lb Brussels sprouts, washed and halved
3 Tbsp. The Olive Vineyard’s Persian Lime Olive Oil
1 tsp. Black truffle sea salt
1 tsp. Fresh ground pepper

In a medium pan heat the Persian Lime Oil over medium heat, add the sprouts once the oil is hot.
Fry the sprouts for 2-3 minutes per side, sprinkle with salt and pepper and serve hot.

Cara Cara Vanilla Balsamic & Blood Orange
Dark Chocolate Brownies

4 Tbsp. + 1 tsp. Blood Orange EVOO
2 cups granulated sugar
1 Tbsp. fresh orange zest
1 stick (8 Tbs.) unsalted butter
6 oz. 60%+ dark chocolate, chopped
1/2 cup cocoa powder
2 Tbsp. Cara Cara Vanilla Balsamic
1/2 tsp. kosher salt
5 large eggs, whisked
1/4 cup all purpose flour

Preheat oven to 325. Using a teaspoon of blood orange oil, grease a 9 x 13" baking pan. Line the pan with a strip of parchment paper, cut to overhang the long sides of the pan.

In a large bowl set over a double boiler, slowly melt the butter with the dark chocolate. Stir constantly until melted. Remove from heat & stir in the blood orange olive oil, eggs, Cara Cara Vanilla Balsamic, orange zest & sugar. Mix until well combined. Whisk together flour & cocoa powder and add to the wet ingredients. Fold until there are no visible dry spots.

Scrape the batter in to the prepared baking pan. Bake on the center rack of the oven for 30 minutes or until tester inserted in the center comes out with very moist crumbs adhering. Allow to cool in the pan for 15 minutes and then lift out using the parchment and cool completely before cutting.

This is so yum, we just had to share!

Cucumber Salad

2 Cucumbers, peeled & cubed
1 Ripe Avocado, cubed
1 cup Cherry Tomatoes, cut in quarters
¼ cup Red Onion, minced
Pinch of salt
2 Tbsp. The Olive Vineyard’s Basil Olive Oil
4 Tbsp. The Olive Vineyard’s Strawberry Balsamic

1. Mince the red onions and mix with the Basil Oil, Strawberry Balsamic and salt, let sit for 10-15 minutes.
2. While the Oil and Vinegar mixture is sitting, chop and peel the cucumbers, tomatoes and avocado then place everything in a bowl.
3. Stir the Basil Oil, Strawberry Balsamic and onions once more then drizzle it over the top of the cucumber, tomato and avocado mixture, toss gently and enjoy.

Tip:
The avocado should be slightly firm not mushy, you want chunks of avocado not avocado slime. : )

Delicious, this is our favorite way to use peaches!!

Mariah's Peach crumble
4-5 fresh or canned peaches, sliced
1/2 tsp ground cinnamon
6Tbsp sugar
3 Tbsp The Olive Vineyard's Peach Balsamic Vinegar
1 cup plus 6 Tbsp flour, divided
1 cup old fashioned oats
1cup brown sugar, packed
1 cup butter,cold and cut into 1/4 inch cubes

1. Preheat oven to 350.
2. Lightly grease 9x13 glass pan.
3. Mix peaches, cinnamon, sugar, peach balsamic and 6 tablespoons of flour and add to the 9x13 pan.
4. Mix the rest of the flour, oats and brown sugar. Add butter and gently squeeze the crumble mixture together using your hands until you only see little chunks of butter.
5. Sprinkle the butter mixture over peaches and bake uncovered for 45 minutes.

This is best served warm, try topping it with whipped cream and some Black Cherry Balsamic drizzled over it or you can serve it over some vanilla bean ice cream. I would use all 3 : ) enjoy

Tip: When you are incorporating the butter with the rest of the crumble ingredients make sure you work quick, the butter will melt especially since you are using your hands. You should still see little chunks of butter in the crumble mixture when you top the peaches with it.

Yum, The weather this morning makes me want to make some soup.

Crishelle’s Honey Ginger & Butternut Squash Soup

2½ - 3lbs Butternut Squash
2 cups chicken or vegetable stock
1 - 1½ cups milk
1/2 cup The Olive Vineyard’s Honey Ginger Balsamic Vinegar
Salt & Pepper to taste
2-3 Tbsp. The Olive Vineyard's Tuscan Herb, Garlic or Cilantro & Roasted Onion EVOO

1. Preheat oven to 450F.
2. While the oven is preheating peel, seed and cube the squash into 1in cubes. Coat the squash with olive oil and sprinkle with Salt & Pepper.
3.Spread squash evenly on a parchment lined baking sheet and bake for 40-50 minutes or until squash is tender.
4. Combine squash and 1 cup of stock in a blender and puree until smooth. Place puree in a medium sauce pan and add remaining stock, milk, vinegar, salt and pepper.
5. Bring the soup to a low simmer, take if off of the heat and serve.

Enjoy with a warm loaf of bread :)

This is one of our favorite recipes to make at home, it's super simple and cheap to make.

Quinoa Cakes:

2 cups cooked quinoa (1cup uncooked quinoa follow package directions)
1 cup grated jack cheese
3-5 tablespoons all-purpose flour
3 green onions sliced thinly (1 for garnish)
1 egg lightly beaten
4 Tbsp. The Olive Vineyard's Tuscan Herb Olive Oil (2 Tbsp. are used to fry the cakes)

Garlic Sauce:
1/2 cup low fat plain greek yogurt
1 head of garlic
1 small lemon, zested and juiced

1. For the cakes place all ingredients into a mixing bowl and stir together until well combined (use 3 Tbsp. flour at first, if the mixture is really wet add the remaining 2 Tbsp.).
2. Pour oil into a large sauté pan or griddle over medium heat and wait until the pan is hot.
3. Form patties using about 1/4 cup of the quinoa mixture and place onto the heated pan or griddle. Cook the quinoa cakes for about 5 minutes per side. Repeat with the remaining patties until all of the cakes have been cooked.
4. While the quinoa cakes are cooking mix the ingredients for the Garlic Sauce together until combined.

Tips:
To give the quinoa a little more flavor use chicken or vegetable stock instead of water.
You could use The Olive Vineyard's Milanese Gremolata Oil, or the Cilantro and Roasted Onion Oil in place of the Tuscan Herb Oil.
Drizzle the Garlic Sauce over the warm quinoa cakes, top with a few of the remaining green onion slices and enjoy : )

Nectarine and Honey Spinach Salad (serves 2 dinner size salads)

1 Ripe Nectarine, cut into cubes (not to soft)
6 cups baby spinach
1/2 cup candied pecans, chopped
1/4 cup shaved parmesan cheese

Dressing:
4 Tbsp. The Olive Vineyards Honey Ginger Balsamic
2 Tbsp. Lime Juice
2 Tbsp. The Olive Vineyards Persian Lime Olive Oil
1 tsp. The Olive Vineyards Chipotle Olive Oil, optional

1. Whisk the dressing ingredients together and let sit.
2. Place approximately 3 cups of Spinach in each bowl, top each salad with chopped pecans, shaved parmesan and nectarine.
3. Drizzle the dressing over the salads and enjoy!

Tip:
If you like your salad tossed, place the spinach and dressing in a bowl and toss, then place the spinach in the bowls and top with pecans, shaved parmesan and nectarine.

Chicken Drumsticks (3 servings)

6 drumsticks
3 Tbsp. The Olive Vineyards Garlic Olive Oil
1/4 cup The Olive Vineyards Oregano Balsamic
1 long sprig of rosemary or 2 small ones
Sprinkle of Salt & Pepper

1. Preheat oven to 375F.
2. Place the Garlic Oil in an oven safe medium pan over medium heat.
3. When the Oil is hot slide the rosemary off of its stem and into the oil, sauté the rosemary for 3-5 minutes then sprinkle it with salt and pepper.
4. Add the drumsticks to the pan and cook for 5 minutes each side.
5. Once the drumsticks have cooked for 5 minutes on each side drizzle the oregano balsamic over the chicken, cover the pan with foil and place it in the oven for 20 minutes.
6. Remove chicken from the oven and let sit for 5 minutes.

Tip:
Rice only takes 20 minutes and would be a perfect accompaniment to this.
You could also serve this with Corn on the cob or broccoli! Enjoy
