SOMBE (CASSAVA LEAVE IN PALM OIL [Engazi/Enghasi])

This is sombe (cassava leaves), a local delicacy among the Bayira settled on the Rwenzori slopes (Bayira include Bakonzo on Ugandan side & Banandi on DR. Congo side of the Rwenzori), also enjoyed by Rwandans and many other west Africans.
Sombe is made out of cassava leaves, pounded finely and hard boiled for about 90 minutes. It is then mixed with palm oil and dried or grilled fish, or roasted meat or cow leg (mulokonyi). Among the Bayira, Sombe is served with obundu (cassava bread or manioca/tapioca), other people also like sombe served with steamed rice or posho (maize bread).
Sombe is a very special sauce among the Bayira/Bakonzo, irrespective of their current location.
