Growing up in Maine, summer was always a short season. It tends to sneak up on you in June and then, before you know it, there’s a red tinge to the leaves and a chill in the air. And because summer goes by in a flash, we learn to take advantage of what the season has to offer before it’s too late.

It's an extraordinary cake to serve with your afternoon coffee or a treat to end your evening meals. Not only does it make the prettiest slices, but something about serving guava makes it so much more special. I mean, when was the last time you ate a guava dessert?

Smoothies are a quick and easy breakfast on the go or a refreshing midday pick me up.

This peach smoothie celebrates summer’s favorite fruit and pairs it with a perfect partner—almonds. They’re both from the prunus genus of plants, which also includes apricots, plums, and cherries.

I use both almond extract and almond butter to enhance the natural sweetness of the peaches and add healthy fats to keep you full until your next meal.

A little ripe banana adds natural sweetness and creaminess without overpowering the smoothie with banana-ness. Regular, room temperature banana works, as does frozen—just make sure it’s nice and ripe. Yogurt adds more creamy goodness along with protein.

This is a healthy smoothie that really and truly tastes like a treat.

As soon as the temperature starts to drop, I look for ways to add pumpkin and spices to everything. I love the orangey-brown color, like the changing foliage, that pumpkin brings to baked goods. Let alone the robust flavor and the tender texture that it provides.

Regardless of the season, I tend to add chocolate to whatever I can. What doesn’t improve with the addition of decadent chocolate? If you’ve never had chocolate and pumpkin together, it’s a delicious combination. Sweet pumpkin pairs remarkably well with the slight bitterness of chocolate. Add in pumpkin pie spice and the flavor is reminiscent of spiced Mexican chocolate.

These Pumpkin Chocolate Chip Muffins combine cozy pumpkin spice with pockets of rich chocolate. They’re an easy way to add some much-needed spicy comfort to chilly mornings, but they also make a wonderful snack or dessert later in the day.

They’re so chock full of healthy goodies you'll wonder why you haven't been eating cookies for breakfast all along. Most of the sweetness comes from the dried fruit in the cookies, not the sugar in the dough. As an extra bonus, they’re gluten free and peanut-allergy friendly.

Mix 2 tablespoons cornstarch, garlic powder, and ground ginger together in a small bowl. Toss chicken thighs in cornstarch mixture until they are evenly coated.

Step 2
Heat oil in a skillet over medium-high heat. Cook chicken in the skillet until browned on all sides, 3 minutes per side. Transfer to a plate and set aside.

Step 3
Drain juice from the can of pineapple chunks into a measuring cup. You should have approximately 3/4 cup to 1 cup of juice.

Step 4
Mix 1/2 cup pineapple juice, chicken stock, rice vinegar, brown sugar, ketchup, and soy sauce together in a slow cooker. Add browned chicken pieces and stir to coat chicken with the sauce. Cook on Low for 3 1/2 hours.
