When your friends and family prefer these peanut butter chocolate chip cookies over regular chocolate chip cookies, you'll thank me for how obsessive I am about my cookie-making. In fact, I'm almost ritualistic in my preparation of them.

These nutty cookies have a cake-like interior, but they are bordered with a crisp, buttery edge that keeps you going back for more. I have to restrain myself when eating them because they're that tasty.

I believe the perfect cookie must have those crisp, lightly browned edges, but they better not be flat and sad. Instead, I want a plump, thick interior that has some chew to it. These cookies exceed those requirements and are both freezer and make-ahead friendly. In short, they're the unicorn of cookies.

Ever heard of monster cookies? To know them, is to love them.

If you are familiar, you likely have connections to the Midwest, where they’re a favorite. Imagine oatmeal peanut butter cookies studded with chocolate chips and M&Ms. Once you try them, you’ll agree that they should be making them in all 50 states!

In general, cookies are great for feeding a crowd because one recipe yields dozens, but scooping, shaping, and baking them in batches takes time and effort! If you spread your entire bowl of cookie dough out on a sheet pan instead, you can get the job done in one go. Then, all you have to do is cut them into squares after they’ve baked.

Not only is this recipe a breeze for the baker, but it is a dream for whoever gets to eat them. These cookies are soft, chocolatey, and nutty! The oats add a great chewiness, the chocolate chips add to the melty gooey texture, and the M&Ms maintain their shape and crunch.

Also, did I mention that these are gluten-free? With all of these flavors and textures, you won’t be able to tell the difference.

Dairy vs Nondairy Smoothies
Since I have no problem with dairy, I make this smoothie with yogurt, but you could substitute almond milk for the yogurt if you want to avoid it.

Add a few drops of lemon or lime juice to replicate the tanginess of the yogurt if your smoothie isn’t tart enough for your taste. You could also use any other non-dairy milk or yogurt interchangeably here.

Growing up, we had some of the standard American foods for breakfast—cream o' wheat, oatmeal, waffles, fried eggs, pancakes (no sugar coated cereals in this household!)—and a couple things I never saw in any of my friends' homes—huevos, and my favorite chorizo with eggs.

My mother is hispanic by ancestry and looks, and even though she doesn't speak a drop of Spanish she still cooks what she was taught by her mother, grandmother and relatives, growing up in Tucson, Arizona.

Thus we alone on our block had chorizo, or Mexican sausage scrambled up with eggs. I didn't even know that chorizo was the name of the sausage and not the dish until I was in my twenties.

What is chorizo?

A spicy pork sausage. While the Spanish version is usually spiced with paprika and garlic, Mexican chorizo is spiced with chile peppers.

I've seen chorizo served in Mexican restaurants most often as a side sausage, like bacon. We cook ours up with the eggs and add some raisins as well, the sweetness of which provides some balance to the spicy chile in the chorizo.

Cloud eggs or eggs nests, whatever you call them, they are a delightful way to prepare eggs. You basically whip up the egg whites, form cloud or nest shapes with the whipped egg whites, and plop the egg yolk in the center, and bake.

Oh yes, and some grated cheese is folded into the whipped egg whites. More cheesy structure for the nest.

Preheat oven to 425 degrees F (220 degrees C.)

Step 2
In a saucepan, combine chicken, carrots, peas, and celery. Add water to cover and boil for 15 minutes. Remove from heat, drain and set aside.

Step 3
In the saucepan over medium heat, cook onions in butter until soft and translucent. Stir in flour, salt, pepper, and celery seed. Slowly stir in chicken broth and milk. Simmer over medium-low heat until thick. Remove from heat and set aside.

Step 4
Place the chicken mixture in bottom pie crust. Pour hot liquid mixture over. Cover with top crust, seal edges, and cut away excess dough. Make several small slits in the top to allow steam to escape.

Step 5
Bake in the preheated oven for 30 to 35 minutes, or until pastry is golden brown and filling is bubbly. Cool for 10 minutes before serving.
