Darajani is the market at the heart of Stone Town. Narrow aisles stacked with spices and fruit and fish and noise and colour and the kind of energy that makes you forget you were just looking.

This cocktail has the same effect. White rum and Blue Curaçao, shaken with orange juice and finished with orange bitters. There's a lunch dish at Pongwe that guests talk about the way people talk about a restaurant they found down a side street in a city they love. Quietly, specifically, and with the look of someone who doesn't want too many other people to find out.

The fish tacos.

Crispy battered fish, caught that morning, tucked into grilled flatbread with fresh greens, a drizzle of sauce, and purple microgreens from Pieter's hydroponic farm down the road. A dipping sauce on the side for the people who like to be involved. The batter is light and crisp. The fish is the opposite of an afterthought. The whole thing disappears faster than you expected and the only question left is how soon you can order it again.

They're a lunch dish. The kind of thing you eat barefoot, still salty from the ocean, sitting at a table with sand under your feet. And then you spend the rest of your holiday quietly rearranging your days to make sure you're here at lunchtime.

You don't see tamarind on many cocktail menus. Most bars don't know what to do with it. It's sour, it's sweet, it's dark, it's complicated. It doesn't behave like other fruits. It doesn't simplify itself for the glass.

The African Beauty doesn't ask it to. Vodka, tamarind juice, lime, and simple syrup. The tamarind does the talking. The vodka gives it a stage. The lime sharpens the edges. The syrup keeps things civil. What arrives is dark and tart and striking and completely unlike anything else you'll drink this week.

The tamarind trees on this island have been here longer than the cocktail shaker. Sometimes the best recipes are just a matter of the right ingredients finally meeting the right moment.

There's a cocktail on the menu called the Stephano Bay. And there's a reason it's called that.

Stephan is the person who appears at your lounger before you've finished deciding what you want. He's the smile at the top of the steps with a tray in his hand and a drink you didn't know you needed. He moves between the bar, the beach, the pool, and the restaurant like someone who knows this place by heart, because he does.

The drink that carries his name is bourbon shaken with fresh ginger, honey, lime, and basil. It is warm and sharp and generous, which is about right. The bourbon gives it backbone. The ginger gives it character. The honey and basil soften everything just enough. And the lime keeps it all honest.

At a 23-room hotel on a secluded beach on Zanzibar's east coast, you get to know the team by name. And sometimes, the team gets a cocktail named after them. That's the kind of place this is.
