There is something much bigger about creating spaces where African food is treated as cuisine, craft, heritage and an industry, rather than simply something we eat every day.

There is also beauty and skill in the food we grew up eating. There are stories in our ingredients, knowledge in our preparation, and generations of tradition behind our dishes.

~Our food deserves to be studied.
~Our ingredients deserve to be celebrated.
~Our chefs deserve to be recognised.
~Our culinary traditions deserve to be documented and passed on.

This week’s special has been our Grilled Chicken Breast, and while you may have seen it served with potato wedges, this is another way we love to work with it, grilled chicken breast served with rice and a fresh mango bean salad.

That’s the beauty of a good dish. With the right pairings, the same main ingredient can take on a completely different character.
