有時候，最好的風味來自於時間與耐心

Jus（發音為 zhoo）是經典法式料理中的術語，指的是一種透過萃取烤肉與骨骼中的風味，所製成的天然濃縮肉汁。
不同於一般肉醬，Jus（肉汁） 不添加增稠劑或人工調味，而是經過長時間熬煮，淬鍊出純粹而自然的風味。

在 La Locanda，我們將鹿肉修整後剩餘的部位，搭配香草與白酒慢火熬煮超過 4 小時，製作出我們自家熬製的 Jus。

這正是形塑正統義大利料理精神的細節之一：尊重每一份食材，讓天然風味自然展現。

Sometimes the best flavor comes from patience.

Jus (pronounced zhoo) is a classic French culinary term for a naturally concentrated meat sauce, made by extracting flavor from roasted meat and bones.
Unlike gravy, there's no thickener or artificial seasoning, just pure flavor developed over hours of cooking.

At La Locanda, the trimmings from our venison are slowly simmered with herbs and white w**e for over 4 hours to create our house-made jus.

It's one of the many details that define authentic Italian cuisine: respecting every ingredient and letting natural flavors speak for themselves.
