什麼是 GABA 茶?為什麼喝了可以放鬆思緒💭
在 1980 年代的日本,津志藤二郎博士在茶葉的研究過程中發現了「無氧發酵」的製程,讓茶菁產生高含量的 GABA(γ-胺基丁酸,γ-amino butyric acid),當時僅是為了保存新鮮的茶菁🍃
既要讓它早點採摘、不繼續在茶樹上熟老,又要在入廠處理前爭取時間、保留新鮮,避免茶菁氧化變成了研究課題。
正因為日本對於「不發酵茶」——煎茶、抹茶、玉露⋯⋯🍵的熱衷,以及茶葉處理技術和品味的鑽研,讓「無氧發酵」的天然 GABA 茶無意間誕生了!
茶菁採收後,透過悶蒸讓茶葉在無氧環境中發酵,自然地產生高濃度的 GABA,對飲用者帶來放鬆、安神、調節血壓等好處。
這富有養生價值的 GABA 茶,也在 1990 年後的台灣扎根,又稱「佳葉龍茶、加碼茶、元氣茶⋯⋯」。經過台灣茶農一代代製程改良,口味更為鮮甜,不再帶有早期傳統製程的酸味,讓 GABA 茶也在台灣越來越受歡迎。
也有一說 GABA 茶又稱爲孝子茶,是因為茶農希望給他愛茶又對咖啡因敏感的母親,時時能回味茶飲,因而投入 GABA 茶的技術。
