Testing note:
酒體風味利用紅酒與桶陳蘭姆酒做搭配,
帶點藍莓、可可、堅果,整體偏酸,
與上層偏甜的紅玉紅茶泡沫去做風味平衡。
比較特別的是這邊的酸液選擇佛手柑,
整體的酸度比起檸檬會更明亮一些,
後續酒體的處理選擇用自製的黑可可奶去做奶洗澄清,
除了酒體更滑順乾淨之外,尾韻會有明顯的可可香氣。
Testing note:
Red wine and barrel-aged rum shape the body of the drink,with hints of blueberry, cocoa, and nuts.
The drink leans acidic overall, balanced by the sweeter Ruby Black Tea foam on top.
What’s more special is that the acid here chooses bergamot, The overall acidity is brighter than lemon.
The drink, I chose to use homemade black cocoa milk for milk washing and clarification.
In addition to being smoother and cleaner, the finish will have a rich cocoa aroma.
