地中海飲食金字塔，從大量的穀物到色彩豐富的蔬果、橄欖油，再來就是魚類及海鮮了，它是重要的蛋白質來源，也難怪對地中海飲食而言「海洋是天然的食物儲存庫」。

這樣的環境和飲食習慣與台灣也有很多共鳴，作為海島我們同樣擁有豐富的漁獲資源，地中海的食材本味也和台灣人喜愛的靈活且平衡的風味非常契合。

地球上距離九千多公里的地中海，不是遙遠的風味，是從食材到風味，皆與我們的生活節奏貼近的飲食哲學。

地中海是地球上最大的陸間海，這片海將歐洲、亞洲和非洲的口味融合成一個能共同享有的飲食風格。

適量的海鮮、乳脂、葡萄酒可以襯托紅、黃、綠色蔬果堆疊的鮮豔多彩，風味元素豐富，吃起來卻相當和諧——這就是地中海料理的魅力。

為了呈現這樣的和諧風味，用鮮味、辛香、奶香的調性風味組合呈現這道料理：鱒魚肉的油脂極低搭配用鮮魚奶油白酒醬汁泡泡，襯托鱒魚鮮味與滑順口感。西西里燉菜caponata用大量的茄子，與櫛瓜、甜椒、洋蔥等蔬菜，在不同口感的蔬菜中平衡每個口感與酸甜風味，是一道輕盈沒有負擔的魚肉料理。

昨天，Sunbird 與 Restaurant Le 23 的主廚 Benjamin Bonnet 攜手帶來了一場充滿南法風情的饗宴。這場餐會以地中海沿岸的法國料理為靈感，運用台灣當季食材，展現南法料理輕盈、純粹且層次豐富的特點。

主餐以經典麵疙搭(Gnocchi) 為靈感，將傳統的馬鈴薯換成在地的台農57號地瓜，賦予麵疙瘩更紮實的口感，搭配藍紋起司奶泡與鼠尾草，帶來溫潤而平衡的風味。而玉米糕(Polenta) 則融入台灣蒔蘿與自製鹹鴨蛋蛋黃，搭配 64°C 溫泉蛋，讓這道傳統菜餚更添清新細膩的層次。
從尼斯洋蔥塔、普羅旺斯蔬菜凍到以椰奶提味的白花椰濃湯，每一道料理皆向南法經典致敬，也巧妙融入台灣食材的特色。感謝每位來到現場的朋友，一同感受春天的地中海風情🌿

Last day, Sunbird and Chef Benjamin Bonnet from Restaurant Le 23 joined forces to create a Southern French-inspired dining experience. Drawing inspiration from the Mediterranean coast, this collaboration highlighted the essence of Southern French cuisine—light, refined, and rich in layers—while incorporating Taiwan’s seasonal ingredients.
For the main course, we reinterpreted the classic Gnocchi by replacing traditional potatoes with Tainong 57 sweet potatoes, resulting in a firmer texture complemented by a blue cheese emulsion and sage. The Polenta was elevated with local dill, house-made salted duck egg yolk, and a 64°C onsen egg, bringing a refreshing twist to this traditional dish.🌿

From the Pissaladière with sweet onions and kalamata olives to the Ratatouille terrine and the velvety cauliflower velouté with coconut cream and smoked yuba, each dish paid homage to Southern France while embracing Taiwan’s vibrant produce. 很高興能邀請到 .taipei 的主廚 Benjamin Bonnet 舉辦聯手餐會，過去定居在法國的主廚 Benjamin，2023年在台北內湖開了 Le 23，希望能重現家鄉的料理與氛圍。

這次餐會以地中海沿岸的南法為主題，使用台灣豐富的當季食材，從普羅旺斯的香草風味到料理手法，呈現道地、輕盈而鮮明的風味，邀請您一同感受春季的南法風情🌿

We are delighted to welcome Chef Benjamin Bonnet from Restaurant Le 23 for an exclusive collaboration. Having lived in France for many years, Chef Benjamin opened Le 23 in Taipei’s Neihu District in 2023, hoping to recreate the flavors and ambiance of his hometown.

This special dining event is inspired by the Mediterranean coast of Southern France, featuring Taiwan’s rich seasonal ingredients. From the fragrant herbs of Provence to traditional cooking techniques, the menu will highlight authentic, light, and vibrant flavors—inviting you to experience the essence of Southern France in spring. 🌿
