過去,我們以重新詮釋臺灣辦桌菜,讓更多人認識TABLEAU,也迎來許多來自世界各地的客人。新的一年,我們為自己立下新的目標,從「傳承」、「創新」與「國際觀」三個方向出發,Chef Craig帶領團隊重新思考臺灣料理與法國料理之間的連結,讓臺菜不只是單純的老菜新做,而是從兩者之間尋找共通的料理基因,喚起彼此互通的味覺記憶。
在全新一季的菜單中,TABLEAU以「序曲」揭幕,透過春季最新鮮的食材,分享這片土地的豐饒與生命力,也象徵著這股料理創新將不斷延續。
In the past, by reinterpreting traditional Taiwanese banquet dishes, we introduced many people to TABLEAU and welcomed guests from around the world. In the new year, we set new goals inspired by heritage, innovation, and a global perspective. Led by Chef Craig, our team explores the connection between Taiwanese and French cuisine, seeking the shared culinary DNA that links the two and evokes familiar taste memories.
For the new seasonal menu, TABLEAU opens with an “Overture.” Using the freshest ingredients of spring, we share the richness of Taiwan’s land and the beginning of a new chapter of creativity.
