RAW帶來法國巴黎的「Bistronomy」概念,跳脫拘泥的用餐形式, 清新、自然、不做作
且同時精準的烹調手法。
在思考「重新詮釋的台灣滋味」的同時,RAW一頭鑽進台灣24節氣裡的各種當令食材,以非傳統的處理方式, 重新發掘組合出各種餐飲上的新創意。
承襲Chef André一貫的敏銳與藝術性,RAW團隊深究食材, 文化, 與廚藝的關聯, 在用餐過程中徹底顛覆並重新建構台灣滋味。

Zor, André, 及 Alain三位主廚一起架構出的RAW,充滿了各種可能性。RAW的每個呈現都灌注了他們的意念,不同的特質,同樣站在廚藝的頂端,他們三位一體讓RAW與世界同步。屬於台灣的Bistronomy從此開始。
THE BRAIN| Zor (陳將停): 擅長發掘味道、精於將食材組合出全新視覺與風味,對五感交錯組合搭配有相當獨道的見解
THE EYES| André (江振誠): 善於洞悉事物的本質, 透過他的視界, 為原本平庸樸實的料理帶來新視野,也帶來具有世界觀的詮釋手法
THE HANDS| Alain (黃以倫): 土生土長的台灣人,對於本地食材熱愛且有濃厚的感情,總能發掘出食材最棒的味道, 靈敏的味蕾與專注力,精確的做出完美的料理
RAW is the most exciting new restaurant project in Taipei, a groundbreaking concept by the internationally celebrated Chef André Chiang and his Taiwan culinary team. Presented by the Hasmore Restaurant Group, RAW will redefine the way cooking is experienced in Taiwan.

The culinary style of RAW is “bistronomy”; for the uninitiated, it is a casual fine-dining ethos born on the streets of Paris that showcases the pleasures of French cooking sans the crushing price tag. The freshest ingredients assembled with painstaking technique, savored in a refined but relaxed setting is what bistronomy is all about.
