Tonight, we challenge that idea—pairing sweet wines with savory dishes to redefine your expectations.
Ximenez Spinola is one of Jarana’s personal favorite wineries.
With nearly 300 years of family winemaking history, the estate has focused exclusively on Pedro Ximenez (PX) since the 19th century—a rare dedication even within the Sherry region.
In a region where PX is traditionally used only for sweet wines, winemaker Jose Antonio Zarzana stands out as one of the few who dares to challenge regulations and conventions.
By crafting PX into dry, off-dry, and semi-sweet styles, as well as sweet wines made with different drying methods, he reveals the astonishing versatility of a single grape variety.
