金子司出生於東京並從18歲起就開始在壽司店工作,至今已經有22年的豐富經驗。
金子師傅曾在多家米其林壽司店中學習和修業。其中包括東京的二星壽司店「金坂」、澳門的二星餐廳Sushi Mizumi,以及香港的三星餐廳「志魂」等等。這些經驗豐富的學習機會使他能夠吸收各家壽司店的精髓,並將其融合到自己的料理風格中。
金子師傅通這些年所學的技術、創意和經驗相結合,創造出獨特的金子風醋飯。這種醋飯是他對壽司品質的堅持和追求的結晶。
甚至在選擇調味料方面也非常講究。他不僅尋找高品質的日本當地小農生產的限量版醬油,而且對調味香氣的極致追求。他相信這些細節對於打造出優質的壽司菜品至關重要。
Kaneko san was born in Tokyo and started working at a sushi restaurant from the age of 18. With 22 years of experience, he has gained a strong foundation in the art of sushi-making.
Kaneko san has studied and trained in several Michelin-starred sushi establishments. These include the two-starred sushi restaurant "Kanesaka" in Tokyo, the two-starred Sushi Mizumi in Macau, and the three-starred "Shikon" in Hong Kong, among others. These diverse learning opportunities have allowed him to absorb the essence of each sushi restaurant and incorporate it into his own culinary style.
Combining the techniques, creativity, and experience acquired over the years, Master Kaneko has created his unique Kaneko-style sushi rice. This shari is the result of his unwavering commitment to and pursuit of sushi quality.
Even in the choice of seasonings, he pays great attention to detail. Not only does he seek out limited-edition soy sauce produced by high-quality local Japanese farmers, but he also strives for the ultimate balance of flavors and aromas. He believes that these nuances are crucial in crafting exceptional sushi dishes.
