We came across a passionate plantain producer in Kaohsiung, and the idea was born as soon as we got our hands on this treasure.

In Central America, plantains are enjoyed at every stage—from verdes to maduros, from green all the way to overripe.

We decided to create a dessert that showcases the full spectrum of this beautiful fruit.

At the base, we start with a mazamorra of panela (unrefined cane sugar), plantain, and spices, prepared when the fruit is just ripe.

Surrounding it, a crispy tuile made from overripe plantain flesh.

On top, tostones made from green plantains.

And to make the most of this precious ingredient, an ice cream crafted from plantain skins.

Taiwanese ingredients inevitably intertwine with Latin American traditions.

This season, our sommelier Danny hand-picked two wines from Argentina for our wine pairing menu.

Torrontés has found its true expression in Argentina. Crafted as a refined orange wine by Susana Balbo, the “Queen of Torrontés,” it is floral and gently herbal, with notes of candied grapefruit and peach. It brings a vibrant aromatic lift to our Ruby Snapper with leche de tigre.

We also feature an Argentine wine from the Rothschild family, a bottle that, much like our cuisine, speaks of two worlds meeting. Classic Bordeaux winemaking techniques merge with Argentina’s emblematic Malbec, resulting in a wine that is full-bodied yet balanced, and a natural companion to our barbacoa Mangalika Pork.

Chimichurri, a true emblem of Argentina, is the classic companion to the traditional “Asado.”

Our rendition celebrates simple, fresh ingredients in perfect harmony, brought together with the exquisite olive oil from our friends at Familia Zuccardi.

We begin with a brine gently infused with bay leaf and sweet chili flakes, preserving the vibrant flavors of parsley, oregano, garlic, red peppers, and onions. A splash of red wine vinegar and a generous pour of olive oil complete the mix, which rests for at least a day, allowing the flavors to meld into a bright, aromatic harmony.

Seasonality and availability are the quiet forces that guide our menu. We move with nature rather than against it, embracing her rhythms and her limits. When sourcing seafood, this means remaining open, allowing the ocean to decide what is ready to be shared.

If a dish calls for a white fish, we turn to our fishermen and ask them to read the tides for us. In this season, the same preparation may arrive at your table as Ruby Long-Tail Snapper, Seabream, or One-Spot Snapper. Each carries its own personality—subtle shifts in texture, nuance, and aroma—yet all harmonize with the spirit and flavor of the course.

Our intention is simple: to listen to nature, to adapt ourselves to her offerings, and to let each ingredient shine at its peak. Cooking methods, times, and temperatures shift accordingly, allowing the dish to evolve as the seasons do.

Two star ingredients take center stage in this season’s shrimp course.

At its heart are sweet red shrimps from Yilan, paired harmoniously with cacao from Nantou.

We begin by gently peeling the shrimps and marinating the tails with cacao butter and cacao nibs. The heads are transformed into a rich, aromatic sauce: roasted gently with cacao butter, infused with chilies, aromatics, and a handful of cacao bean shells—a byproduct of the farm’s production that still carries the fragrance of fermented and roasted beans, lending subtle depth to the sauce. Just before reaching our guests, the sauce is strained and finished with an emulsion of seventy percent dark chocolate from the same producer. All the cacao we use comes from this single farm, with whom we have nurtured a partnership for the past three years.

Last, to complement the fruitiness of the cacao and the sweetness of the shrimps, we top it with freshly sliced plantains, grown also in Taiwan.

What a way to start our year!

We are incredibly humbled and grateful for this recognition of .

As a proud member of the Taiwanese gastronomic landscape we would like to extend a heartfelt thank you to all of our guests who have supported us during this first years.

Nothing would be possible without a caring and loving team. Without them, our beloved place would not be able to reach new heights and evolve into where we are today. They provide the daily dose of generosity, warmth and attention that we so much need to take care of our diners.

There is no place without a sense of belonging.

ZEA is now well rooted in Taiwan. This is a result of many business partners, suppliers, farmers, producers, artisans, fishermen, middle man and women that allow us to curate a beautiful experience day after day. All of them work together to bring magic evenings alive and create memories that we will remember for life. To all these wonderful people, we thank you too.

To our industry peers, thank you for the endless advice and support to our project. We hold the utmost respect for you and we are happy to be among you.
