葡國雞（Galinha à Portuguesa）是一道著名的澳門特色土生葡菜，雖然名字有「葡國」，但其實在葡萄牙本土並不存在，而是由居澳葡人結合印度、馬來西亞及中國等地的食材與香料在地改良發明的美食。特色與食材核心醬汁（葡汁）：以黃薑粉、椰汁（或椰漿）、雞湯及奶類製品調配出香濃帶金黃色的醬汁。主要配料：雞肉（通常為雞腿肉）、馬鈴薯、紅蘿蔔與洋蔥。常見吃法：多數搭配白飯，或放入烤箱做成「葡國雞焗飯」。
