Every coffee begins with listening.

To us, listening is where every conversation starts.

Before we design a roast profile, we seek to understand. From understanding comes thought; from thought, experience and theories, together, they become our way of roasting.

We roast to draw the finest outline of each coffee, allowing it to express the best flavour of itself. With every coffee we encounter, our perspective continues to evolve. Experience reshapes thought; thought shapes flavour.

For us, roasting is a continual act of listening, learning, and refinement.

對於每一支新接觸的咖啡，我們先聆聽因為這是溝通的開始，瞭解而產生想法，想法結合經驗與理論而造就烘焙。勾勒出一支咖啡最好的輪廓、呈現出屬於它自己最好的風味是我們的方式。隨著經驗與接觸種類的增加，想法隨之成熟改變，柔軟調整、打造細節是我們的烘焙。我最近很喜歡的說法，也很像Eske Place.

It’s hard to believe how quickly these past two weeks have gone by. They’ve been incredibly rewarding in so many ways.

A huge thank you to the Mowai neighbourhood for your support every single day, to everyone I had the chance to meet for the first time, and to the familiar faces who came by. It had been a while since I last worked behind the bar alone. The pace of making coffee, and the muscle memory all came back almost instantly—if anything, it reminded me how much I’ve continued to grow.

It was a real privilege to showcase the coffees that Eske Place brought especially for Mowai. Every brew and every conversation became an opportunity to share how we think about roasting as a way of shaping flavour, the details behind our brewing, and the philosophy that continues to guide everything we do at Eske Place.

A special thank you to Society Coffee Roasters for making opportunity possible, and Society Coffee’s Seasonal Blend was an absolute pleasure to work with. Well balanced, expressive, and genuinely enjoyable to brew.

My gratitude to Mowai Espresso again for trusting me with this opportunity and for making me feel so welcome.

兩週的時間過的特別的快，也特別的充實。這段期間內，謝謝Mowai 的neighbourhood 每日的支持，認識的新朋友，來探望我們的老朋友。紐西蘭當地的咖啡專門店一早就營業，快速的節奏，大量密集的出杯。好久沒有自己站吧，突然間熟悉的感覺，深刻的咖啡肌肉記憶都再次的重溫。

很高興這次有機會showcase Eske Place 特別為Mowai 準備的精品咖啡, 在沖煮與品飲的過程中，我們闡述對於烘焙在風味朔造上的想法，沖煮手法細節的分享，以及Eske Place 的核心理念。

There is nothing quite like enjoying a single origin espresso latteon a leisurely day.

義式咖啡也可以有些玩味，生活不用一成不變。

雖然Sweet As 紐澳風格配方是義式咖啡的百搭款，在不用那麼醒的週末，來一杯完整呈現咖啡產區的衣索比亞藝妓種SOE (Single Origin Espresso)latte, 剛剛好的花香，剛剛好的細緻水果甜感，與溫熱的草飼牛乳的細緻奶泡的結合。

入口前莓果與杏桃乾的香甜，口腔中草莓杏桃優格的風味，柔和細緻的果酸，結合水果軟糖的甜感，還有在鼻腔中殘留淡淡的花蜜與香草香氣～ 舒服呀～
