什麼是傳統的法國菜精神呢,那就是用真材實料烹調,盡量不用人工調味,靠火候時間把食材發揮得淋漓盡致。台北內湖就有一位傳統法國菜達人,原本是做機械工程,十多年前遇到產業外移,因為愛吃,乾脆拜師學藝學法國菜,每年還到法國廚藝學校進修,而他的每一道菜,加上醬汁熬煮,幾乎都要4個小時以上,慢工出細活,簡直是把料理當成藝術品。
