一方先生幾十年的家傳手藝，太辛苦而沒有年輕人願意傳承，只好透過 一方麵食館 去展示傳統佳餚的美味與文化。嘴超叼的他，從食材選擇就極為嚴苛，一方先生常說：『自己不吃的，也不給客人吃』 堅持遵循古法，堅持製作工序，堅持如自家廚房，吃過的人都可以感受一方先生滿滿的愛！

店內堅持每天新鮮食材量約70~90碗左右，售完打烊。因為一方先生本身是個商務人士，打烊還要換上帥氣西裝接著工作呢！
