Caribbean fusion: Guyanese Channa from Champion Foods meets trini doubles!
Easy Doubles Recipe (Makes 8–10 doubles)
For the Channa (Chickpea Filling)
Ingredients
* 2 cans Champion Chick Peas, drained (reserve ½ cup of the liquid)
* 1 tbsp vegetable oil
* 1 small onion, finely diced
* 3 cloves garlic, minced
* 1 tsp grated ginger
* 1 tsp curry powder
* ½ tsp ground cumin (geera)
* ½ tsp turmeric
* ½ tsp paprika (optional)
* 1 tsp salt (or to taste)
* 1 tsp brown sugar (optional)
* ½ cup reserved chickpea liquid or water
* Fresh chopped cilantro (optional)
Instructions
1. Heat the oil and sauté the onion until soft.
2. Add the garlic and ginger; cook for about 30 seconds.
3. Stir in the curry powder, cumin, turmeric, and paprika. Cook for 1 minute.
4. Add the drained Champion Chick Peas and the reserved liquid.
5. Mash about one-third of the chickpeas with a spoon to create a creamy texture.
6. Simmer for 10–15 minutes.
8. Finish with cilantro.
Quick Bara
Ingredients
* 2 cups all-purpose flour
* 1 tsp instant yeast
* 1 tsp baking powder
* 1 tsp turmeric
* 1 tsp sugar
* ½ tsp salt
* About ¾ cup warm water
* Oil for frying
Instructions
1. Mix the dry ingredients.
2. Gradually add warm water to make a soft, slightly sticky dough.
3. Cover and let rise for 45–60 minutes.
4. Divide into 16–20 small balls.
5. Flatten each very thin (about 4–5 inches across).
6. Fry in hot oil for 10–15 seconds per side until lightly golden.

Assemble
Place one bara on a plate, spoon on the warm curried chickpeas, add your favorite sauces, then top with a second bara. Fold and enjoy while hot.
Tip: Since Champion Chick Peas are already cooked, this version takes only 20–25 minutes to prepare, making it ideal for a quick homemade doubles meal.
