Our aim is to offer authentic Mexican fast food that has been infused with our own inimitable Trini style and flavor. And we know the word “authentic” is one that is easily bandied about by all and sundry, but Maco Taco takes its craft seriously. This is due to the fact that a significant part of the Maco Taco Executive Team is based in Del Mar, a San Diegan city located a mere 20 minutes from the Mexican border city of Tijuana, the largest city on the Baja California Peninsula. We are constantly doing research. Our mode of preparation, from our hand rolled house tortillas to our chili seasoned meats is directly borrowed from the barrios of the Tijuanan streets while we stay true to Trinidadian staples like garlic sauce, chadon beni and tamarind.
