Kimchi #김치 is fermented through the work of anaerobic, salt-loving lactic acid bacteria.

While many ingredients contribute to kimchi’s rich flavor, some also play a role in how quickly fermentation takes place. Garlic, red pepper powder, and fish sauce are known to accelerate the process, encouraging faster bacterial activity while adding bold, spicy, and umami notes.

On the other hand, ingredients like scallions and ginger don’t significantly affect the speed of fermentation, but they add fresh, aromatic layers that round out the flavor profile.
