พิซซ่าที่ไม่ได้เกิดขึ้นในวันเดียว
เพราะเชฟเราทำแป้งพิซซ่าสูตรนี้ทั้งหมด 72ชม.
ให้ได้แป้งพิซซ่าในอุดมคติที่เชฟต้องการนำเสนอ
กับน้ำหนัก 160 กรัม นำไปขึ้นและอบโดยเทคนิคเฉพาะของที่ร้าน
ให้ผิวนอกกรอบ หอมกลิ่นอบด้วยความร้อนสูง
แต่คงความนุ่มชุ่มฉ่ำด้านใน
เพิ่มรสชาติด้วยพรีเมียมทรัฟเฟิลครีม
และจบด้วย Grana Padano Cheese ที่เชฟขูดให้
แบบไม่ยั้งมือจนทั่วถึงขอบนอกแต่ฟูเบาไม่หนักหรือเลี่ยนจนเกินไป
สมกับเป็นจาน โปรดของร้านเรา

Not the kind of pizza that comes together in a day.

Our dough takes 72 hours to get where the chef wants it to be
light, flavorful, and just the right texture.

Each dough ball is weighed at 160 grams, then proofed and baked using our own technique
so the crust comes out with a crisp, beautifully blistered edge from the high heat
while staying soft and tender inside.

Finished with premium truffle cream
and a generous snowfall of Grana Padano
grated all the way to the outer crust
so every bite feels full, airy, and rich
without ever getting too heavy

No wonder it’s one of our favorites.

Our Black Ink Pasta begins at sea.
The squid is caught dally by local fishermen,
size and variety unpredictable,
sometimes baby squid, sometimes banana squid
depending entirely on the day’s tide.

We select only squid that still carries its natural black ink
and has never been rinsed in fresh water.
This preserves the true scent of the ocean and the deep,
mineral sweetness of real squid.

To elevate the flavor further, the chef seasons the dish
with Colatura - traditional Italian anchovy fish sauce
adding a subtle umami depth that lingers softly.

This plate is our purest expression of the sea:
honest, intense, and beautifully complete.

บางวันเป็นหมึกกล้วย บางวันเป็นหมึกกะตอย แล้วแต่ทะเลจะมอบให้

ความอร่อยอยู่ที่เราเลือกใช้เฉพาะหมึกที่ยังมีหมึกดำธรรมชาติติดอยู่
