Escalivada has its roots in the Spanish countryside, where farmers would roast seasonal vegetables over a gentle fire to create simple yet flavorful meals. This traditional recipe transforms fresh peppers and onions through slow roasting until the skin is beautifully charred, bringing out their natural sweetness.

Once roasted, the vegetables are carefully peeled by hand and seasoned with nothing more than extra virgin olive oil and a touch of sea salt. Simple ingredients, timeless flavor.
