Thailand Preserves 231 At-Risk Local Dishes through “The Lost Taste” Project

Thailand is working to preserve up to 231 local dishes that are at risk of disappearing through “The Lost Taste” project, an initiative under the concept of “The Living Heritage” led by the Department of Cultural Promotion, Ministry of Culture. The project documents traditional recipes, culinary knowledge, local ingredients, preparation methods, and the stories behind each dish, while turning this heritage into culinary and cultural tourism experiences that can benefit local communities and businesses.

The initiative builds on Thailand’s strong international reputation for cuisine. The Global Soft Power Index 2026, assessed by Brand Finance, ranked Thailand seventh in the world for “food the world loves,” highlighting the global popularity of Thai food. By going beyond well-known dishes, the project strives to bring out the country’s diverse regional cuisines, many of which reflect the history, environment, livelihoods, and cultural identity of the communities where they originated.

The Department of Cultural Promotion has also developed the Thailand Best Local Food criteria, drawing on expertise from seven specialists and input from more than 400 consumers to establish two categories: Classic, for dishes that preserve traditional recipes and identities, and Creative + Innovation, for contemporary interpretations that retain the essence and cultural value of local food. Five model restaurants have also been selected to showcase local culinary heritage, with “The Lost Taste Special Course” scheduled for September 2026.

The project is part of Thailand’s broader effort to connect cultural heritage with tourism and local economic development. By transforming endangered culinary traditions into experiences for residents and visitors, Thailand aims to encourage travel to local communities, spread tourism income beyond major destinations, and ensure that traditional food knowledge remains a living part of Thai culture for future generations.

Minister of Culture Sabeeda Thaised presided over the launch of the “Thai Local Food to World Food” campaign, which promotes Thailand's local cuisine globally by linking culture, tourism, and the creative economy.

The minister stated that the campaign demonstrates how cultural capital can generate economic value. By preserving Thailand’s culinary heritage, the initiative creates opportunities for local communities and promotes the unique identity of Thai cuisine to international audiences.

​The project is organized by the Department of Cultural Promotion under the theme “The Lost Taste: The Living Heritage.” As part of the initiative, five restaurants were selected through an evaluation process to receive the Thailand Best Local Food (TBLF) certification. The award-winning restaurants are Khao San Sek in Bangkok, Toh Daeng in Phuket, Bucha in Phuket, Mok in Ubon Ratchathani, and Bo.lan in Bangkok.

​From August to October 2026, the five certified restaurants will collaborate to create special menus inspired by traditional Thai recipes. A highlight of the campaign is “The Lost Taste Restaurant Month,” which will showcase authentic culinary heritage.

​This project is an important step in transforming Thailand’s local culinary traditions from community-based cultural heritage into a driving force for the country’s creative economy and strengthening international recognition of Thai cuisine.
