Ever seen a fish hunt so aggressively that its prey jumps out of the water? Meet the Yellow Queenfish, known in Thailand as ปลาสีเสียด. This fast-moving predator hunts small fish and shrimp near the surface. Sometimes, its prey have nowhere to go but out of the water!

In Thailand, it’s traditionally used for salted fish and local curries. But its lean, firm flesh has plenty more to offer. With proper dry ageing, it works beautifully for grilling, fresh preparations, and a variety of modern dishes.
