The Aulis Phuket experience comes to a close with coffee.

It’s been roasted and ground to order, using beans from Rai Na Rak, a local, sustainable producer who provides countless other ingredients for our menu. We pour it tableside and serve it alongside our petit fours.

Our Phang Nga squid dish. Local squid is tenderised in coconut milk for two days, paired with smoked and dried tomato, tomato dashi, blanched Bambara groundnuts and cucamelon, dressed in coconut oil and finished with seaweed, Nam Hom coconut and a crisp tomato garnish. This dish was part of our seasonal menu until the end of March.

“Krachai Collins”

Our take on the classic Tom Collins. We start with local gin infused with krachai (finger root), a member of the ginger family known for its aromatic, earthy character and subtle peppery sweetness. We add white verjus from GranMonte Winery, then finish it with a milk and white chocolate wash for a silky, rounded texture.

We’re also proud to share that we’ve been recognized by as one of Koktail Thailand’s Recommended Restaurants for 2026.
