Cut the zest off the lemon with a knife, being careful not to touch the white layer underneath.

Peel the ginger and slice into thin slices.
3․
Place it in a saucepan. Add the cinnamon and water.
4․
Bring to a boil and simmer for 20 minutes.
5․
Serve immediately or let infuse under a lid. Add honey or sugar to the mugs when serving.
