With each tea tree in its natural form so well taken care of; the soil extremely rich, dark and fertile; the shading so extensive; and the harvesting so careful it’s handpicked only once each year - ‘Single flush tea’ is the rarest, most valuable Japanese tea of all. The only farms skillful and effortful enough to still do it this way are the ones conserving traditional Japanese crafts. Humbly, we pay homage to these few honorable farmers.

The entirety of Peace 和 matcha collection has been redone. There is not a single molecule of tea in any of these grades that are the same as before.

The first half - our most popular grades of the new collection : Naturalist, Essentialist, Purist, and Classicist are now made entirely of ‘First flush tea’. ‘First flush tea’ is the most delicious, most nutritious, and most sort-after tea of all harvests. Our goal is to elevate the whole collection such that even the starting grade ‘Naturalist’ is now suitable for brewing traditional Usucha. All 4 grades come in 2 firing variants : the extremely aromatic ‘High-Firing’, and the ‘all-new Mid-high Firing’ for richer, more balanced, and higher umami flavor profile.

‘Matchless’ series of competition-grade and award-winning teas : Idealist, Perfectionist, Ultimatist, and Legendary. All of these grades now contain the rarest, most expensive, and absolute best ingredient ‘Single flush tea’. There are only a handful of tea farmers in Japan who still produce teas the traditional way. These labor-intensive tea farms are so rare and prestigious each tea bush is in its natural form, ultra long-shaded, and only handpicked once a year to best preserve the health of their tea trees. The soil beneath these trees is extremely dark, rich and fertile. The leaves are unbelievably green, healthy and natural looking. This utter care results in the very best Tencha possible. This precisely allows any of the grades in the ‘Matchless’ series to be suitable for making traditional Koicha.

From the inside out, the complete rebirth of Peace 和 matcha collection not only sets the standard once again, but this… is actually just the beginning of the rebirth of the whole of Peace 和 Oriental Teahouse.

This was our very first wish on the very first day of Peace Ekkamai exactly 10 years ago. Strangely enough, without even thinking, we still make this very same wish every time we open a new branch. Maybe because happiness is our ultimate goal… Our corporate mission to some, may seem insignificant, because we are not here to change the world. Using our work as a medium of our path, each of us only focuses on becoming a better person and a good friend, and in turn everyone of us receives the blessing of being surrounded by many many great friends. This simple thing is our mission. So, may whoever comes here - be it a staff, a customer, a messenger, and even a stranger asking for directions - may each and everyone of them be happy. 🙂
