Some nights stay with you long after the last plate is cleared. This was one of them.

When The Fisherman's Wharf Mobor brought the coast of Goa to our kitchen, two very different Indias met at one table. Their coastal spice, fresh catch and coconut. Our tandoor, our slow-built gravies, our Punjabi heart. Four hands, one menu, and a dining room that didn’t want the evening to end.

Anyone can make chai. Very few make it properly.

Whole spices, cracked fresh — not powder from a tin. Milk brought up slowly, never rushed. Boiled, rested, boiled again until the colour turns. It takes as long as it takes.

Our chaat station is where brunch stops being polite. Golgappe filled to order, the water sharp enough to wake you up. Papdi loaded with yoghurt, tamarind, pomegranate. Aloo tikki pressed hot on the tawa and handed over before it can cool.
