As the World Diabetes Day 2020 is on the 14th of November, it’s the perfect occasion to raise awareness of diabetes globally. More importantly, it’s also the birthday of a Canadian orthopedic surgeon named Sir Frederick Banting who discovered insulin, a diabetes treatment, back in 1921.
If we are talking about Thai dessert, there’s no denying that the main ingredients are flour, sugar, and coconut milk. Here, we have created a new menu of Thai dessert together using U.S. Pinto Beans under the theme of Sugar-free dessert: U.S. Pinto Beans Banana Rice Pudding
Ingredients
3/4 Cup Rice Flour
1/4 Cup Tapioca Flour
1/4 Cup Arrowroot Flour
Salt, a pinch
2 Cups Coconut Milk
50g U.S. Pinto Beans
5 Ripe Cultivated Bananas
Get the U.S. Pinto Beans Ready: Wash the beans in the mineral water as the beans will absorb the water. After the beans are boiled, it will help soften the beans. Repeat these steps 2-3 times.
Soak the U.S. Pinto Beans into 1 liter of water for 6 hours until they are soft. Fret not! The taste, nutrition, and character of the beans will remain the same.
Discard the remaining water, wash the beans then boil them for 45-60 minutes. The beans will become softer and will be cooked throughout this process. Drain and rinse them with water and let them sit to cool down for a while. (50 grams of uncooked beans = 100 grams of cooked beans)
Get Bananas ready for the show: The cultivated bananas should be ripe so we can use the natural sweetness from the bananas instead of granulated sugar. Peel the bananas; gently scrape the flesh and leave out the seeds as we will use only its flesh but remember not to mash them yet.
Get the show ready: Steaming is a famous cooking method that is widely used in ASEAN countries. Heat the water until it boils, then start steaming the mixture for 15-minutes. Slowly pour the warm mixture into each mold. You may sprinkle grated coconut and U.S. Pinto Beans on top of each mold. As “Fine feather makes fine bird.”, Thai desserts also need a nice decoration. Finally, our new dessert is ready!
