The Latest Summer Drink - Pairing Jasmine Tea from Leafly Baker with Honey from Honeyful Cafe 🌱🍯🍋🍓

🍵 Just like matcha, jasmine tea also has multiple grades and price range. The distinguishing quality is where the jasmine scent comes from. Lower-grade jasmine tea is sprayed with synthetic jasmine perfume. Higher-grade jasmine tea is made from more traditional method by imbuing green tea leaves with fresh jasmine flower, cover it overnight while the tea leaves soak up flower scent from fresh jasmine buds. This process is repeated five, seven, or nine times, a labor intensive and time consuming method.

🤔 How can you tell the difference as a consumer? Usually, perfumes leave a rough feeling in your throat after liquid has passed through. In contrast, higher-grade tea will leave a smooth feeling. This will of course be more difficult to tell in iced drinks. Our experience tells us that when the jasmine scent is very “in your face” it might be because it’s synthetic.

🕒 On principle, we don’t use synthetic flavoring at Honeyful or Leafly. The team has spent some time sourcing the right jasmine tea processed with traditional method, and even longer experimenting with how to best extract this particular tea. Time, temperature, and even vessel, were all taken into account.

🌸 The pairing we’ve done in this series highlights the flavors that go well with jasmine. With strawberry, there’s a floral and green undertone which compliments white floral nuances in jasmine. The key is to find the right balance. With yuzu, after long-infusion process with honey, the fermentation of the rind part of the citrus occurs and generates a refreshing white floral scent. The key here is to make sure the final product is not too bitter from the tea and the citrus combined.

But as food trend and preferences change over time, the public is now, more than ever, concerned about the consumption of sweet things. We’ve had to reduce the amount of Manuka Honey in this menu by 13% in order to keep up with customer taste while staying true to the subtle balance between ingredients. We are always mindful about the “sweet spot” where the best balance of taste and health benefit exists.
