Kinmedai has a unique appearance of large eyes and bright red skin. As a deep seas fish, they need those extraordinary size eyes to capture the limit light in deep water. The season that Kinmedai tastes best is winter, from the end of December to the end of March, as the flesh is plentiful of fat making it a perfect ingredient for all kinds of cuisine.
